Grown Up Stir Fry
So I have no idea why this is a Grown Up stir fry, it just looked “grown up” when I made it! Or at least to me it did
It’s super easy and was packed full of flavor! Bonus? It took less than 10 minutes to make. I wasn’t in the mood to cook-cook last night. I just wanted fast, yummy and and easy. And that’s exactly what I got!
So here you go — another idea for a stir fry
Cube Steak
I’ve noticed a lot of you guys are asking for my cube steak recipe whenever I talk about it. And well, here it is! Now fair warning, this is insanley easy and fast. I’ve done the whole “breading” it thing with almond flour or coconut flour and dredging it in eggs, but lets be honest for a second. You all know me, know I hate dishes and well…that whole process requires more dishes and more mess. Not to mention egg-goo + Almond flour on your hands is kinda not as fun as it sounds {at least for me}. So this is my compromise because Mr. Not So Paleo LOVES cube steak, always has always will. Me? I like it too — now that I’ve simplified it.
One addition you won’t see in the picture that I love to do is caramelize up some onions while the steaks are cooking and add it on top when plating. Oh man, oh man. Talk about an epic win. The best part about these pretty little bad boys? Depending on how many you’re cooking and how thick they are…you could literally have dinner for two done in the time it takes you to make a steam-fresh bag of broccoli in the microwave for your side dish.
I know right…amazing! I love the quick and the easy.
{P.S. The picture you see above was my breakfast! So cube steak is now a double-epic-win because it’s so fast and easy you can even have it for breakfast in the time it takes you to fry up four eggs {two for me, two for Mr. Not So Paleo!}}

Cheap & Easy Dinner Example
I thought it’d be nice to break down an easy & cheap dinner for you guys
{ I’m apologizing in advance for the horrible picture. I didn’t want to break out the pro-equipment, I was hungry and this was a last minute blog post idea so… you guys get iPhone picture! Again, Sorry! But it was yummy if that helps?}
Anyhoo tonight for dinner I made a beef stir-fry and I know on the meal plan it said I was going to do mashed sweet potato, but it’d been a long day and I just wanted green beans {they’re easy} so alas, I had green beans and Mr. Not So Paleo had a big ‘ol helping of rice, plus I made mayo {love me some extra yummy fat!}.
So the Beef Stirfry Recipe was:
Ingredients:
• 1lb grass fed ground beef
• 1 medium onion, big dice
• 1/3 bag chopped frozen spinach
• Apple Cider Vinegar, Butter {Kerry Gold}, Salt + Pepper
How To:
• Melt the butter in a big pan and add in onions and let them soften a bit
• Once soften, add in the beef & spinach and let it start to cook.
• Half way through to the done-stage, add in a splash or two of apple cider vinegar, Salt + Pepper and let finish cooking.
Boom, it’s all done!
Process for all of this:
I had a 1/3 of a bag of spinach leftover from making Soup so I used that up, I had gotten the grass fed beef on clearance for $3.49 a while back, I got the green beans on sale in the steam fresh bag for $1.00 {I didn’t use the whole bag, just half…so yay team! I’ve got breakfast tomorrow morning!}. I’ve always got boiling-bag rice on hand, and of course the butter + onions were just in the fridge.
This is why I stress to stock up when things are cheap. I was able to put together a good sized meal, in about 15 – 20 minutes for the both of us, without having to buy anything special. It was all there, in my freezer, ready to go. I rarely if ever buy something special for a meal as far as the meat goes, I buy whats on sale and work with it.
Now let’s talk about how much this cost:
For the both of us {Stir Fry, Rice, Green Beans + Homemade mayo included} it was about $6.25 total. Which is $3.12 per person. And not all of it was finished. There’s a wee bit of left overs for Mr. Not So Paleo to have for breakfast in the morning, and I now have green beans to eat with some eggs!
So there you have it. That’s a look into one of my nightly dinners. It is totally possible to be paleo, on a budget and still eat really really yummy food.
Mini Meatloaf
There’s this well kept secret that I love Meatloaf…Why is it a secret? Because I used to be horrible at making it. Normally it’s either too dry or too wet or just not there flavor wise. I hadn’t made a “mini” meatloaf in so long either because I attempted it a few times when we lived in Providence and well… let’s say Mr. Not So Paleo never asked for seconds.
But the good news is… I have defeated the mini-meatloaf <insert epic fist pump here> and finally made one that is so yummy Mr. Not So Paleo will even eat them the next day as a snack! I like to make these as either a dinner {I normally do three-per-serving in that case} or I like to have them on hand for throughout the week as a snack or for breakfast / lunch!
If having these for dinner I normally pair them with sweet potato and a salad or you could do a veggie mix or even a fried / sunny side up egg would be great with it!
To make these I used a muffin / cupcake tin, mine is a 12 serving one and it makes a medium-ish sized meatloaf.
Pot Roast Soup
This is seriously as yummy as it sounds! And wicked wicked easy. And it’s a Slow Cooker Recipe! It’s like an epic win on so many levels. {Epic + Wicked in first few sentences of blog post = bonus}
The best part? I love pot roast.. but pot roast takes way more effort. You’ve gotta prep, cook meat, watch meat, test meat, let meat rest a little, cut meat, serve. Yeaaaaahhhhhh No. This does a great job of not making my kitchen look like the disaster zone it normally is
{Oops, sorry Mum if you’re reading this… I mean…my Kitchen is beautiful and always clean!} You could also absolutley make this on the stove if you don’t have a crock pot, just slightly cook each layer as you add it in {so let your veggies soften a bit, then add the meat, then add the rest} and let it simmer covered on low for a very long time {like 5 hours at least}.
This isn’t pricey either. Don’t feel like you have to use what I used veggie wise. I used what I had on hand so do the same. Zucchini, Summer Squash, Eggplant etc are all great options in this too! Also, the meat is cheap {it’s stew meat} so buy when it’s on “Managers Special” or on sale for an extra big savings!
Serving wise: We each had a HUGE bowl at dinner, picked at leftovers a little bit. Then had enough for two smaller lunch sized portions. So it could probably comfortably feed four people… But if feeding that many with it for dinner, I’d add a wee bit extra stock!
When done the meat falls apart like a pot roast… And is super yummy!
