Pot Roast Soup

This is seriously as yummy as it sounds! And wicked wicked easy. And it’s a Slow Cooker Recipe! It’s like an epic win on so many levels. {Epic + Wicked in first few sentences of blog post = bonus}

The best part? I love pot roast.. but pot roast takes way more effort. You’ve gotta prep, cook meat, watch meat, test meat, let meat rest a little, cut meat, serve. Yeaaaaahhhhhh No. This does a great job of not making my kitchen look like the disaster zone it normally is :) {Oops, sorry Mum if you’re reading this… I mean…my Kitchen is beautiful and always clean!} You could also absolutley make this on the stove if you don’t have a crock pot, just slightly cook each layer as you add it in {so let your veggies soften a bit, then add the meat, then add the rest} and let it simmer covered on low for a very long time {like 5 hours at least}.

This isn’t pricey either. Don’t feel like you have to use what I used veggie wise. I used what I had on hand so do the same. Zucchini, Summer Squash, Eggplant etc are all great options in this too! Also, the meat is cheap {it’s stew meat} so buy when it’s on “Managers Special” or on sale for an extra big savings!

Serving wise: We each had a HUGE bowl at dinner, picked at leftovers a little bit. Then had enough for two smaller lunch sized portions. So it could probably comfortably feed four people… But if feeding that many with it for dinner, I’d add a wee bit extra stock!

Ingredients
• 1.25 lb Stew Meat
• 1 Large Onion, Big Dice
• 3 Carrots, Big Dice
• 1/2 Medium Butter nut squash, Big Dice
• 1 14oz Can of Diced Tomatoes
• a little less than 8oz of Mushrooms, Big Dice
• ~3/4 Cup Chicken Stock
• Dried Basil, Oregano, Cumin
• Splash of Apple Cider Vinegar
• Salt + Pepper
Instructions
Dice up all of your veggies and layer then in. Once I get them in the crock pot I like to mix them up in there!
Add in your Stew Meat. ** Note on the meat: the pieces were big when I got them, so I chopped them up anywhere from in half to into quarters!
Add in spices {to taste, I literally just sprinkle them in until I’m happy}, Salt + Pepper, Apple Cider Vinegar, Chicken Stock + Can of Tomatoes {with liquid!}.
Stir it up a little, set on high for 5 or so hours or on low for 8 or so hours.

Sweet Potato Chili

You heard right… Sweet Potato Chili… It’s my newest best thing ever {well… until you get the new dessert recipe}. But apparently I’m not the only chili addict around these parts considering the vote was a landslide in favor of the new chili recipe!

 
This is another easy chili recipe… It’s in the middle of the other two I have posted. It’s a stove top one that needs a few hours to sit on low {you could of course use the crock pot… but I hate cleaning it… with a passion, so a pot is way easier for me!}. And of course as always, add whatever you want in here. This is JUST a method. You can do whatever you want to it… add in whatever veggies you’ve got on hand or switch it up so it’s your favorite meats in there { I used what I had in freezer… I hate buying special for recipes…so I don’t lmao!}.

And because I don’t buy special for this… all the stuff that goes in it is always on hand… so umm it’s wicked cheap. Like the frozen sausages and meat I just buy on dirt cheap sale. This chili which was probably two-three meals for two people cost me $6.00{ish} to make!

Okies here’s the recipe!

Ingredients
• 1 medium Sweet Potato {diced into bite sized pieces}
• 1lb ground pork
• 6oz Frozen Sausage {or whatever sausage you have on hand}
• 1 Big can crushed tomatoes
• 1 14oz can diced tomatoes
• 1/3 Big Bag Frozen Green Beans
• 1 Large Onion, Diced {I did a big dice}
• 3 Carrots, Peeled + Diced
• Seasoning: 3 Tbsp Cumin, 5 Tbsp Chili Powder, 2 Tbsp Dried Basil & Oregano, 1 Tbsp Italian Seasoning, 1/2 tsp Garlic Powder + Red Pepper Flakes
• 4 Tbsp Apple Cider Vinegar
• Salt + Pepper
• KerryGold Butter
Instructions
In a big pot get some butter all melted. Toss in your onions and carrots, let them start to cook and soften.
While that’s going on dice up your sweet potato {I kept the skin on} and toss that in. Same with the sausages.
Once those are all happy together you can add in your pork. Then all of your spices, Apple Cider Vinegar, and Salt + Pepper go in. Stir it all together {you want everything coated in the spices and herbs}.
Then… Then… add in your tomato products and then your frozen green beans {if they’re the whole green beans try to snap them in half as you put them in so they’re more bite sized}.
One more big Stir, cover… put it on low.. forget about it for a few hours.
Boom, it’s done…. I serve mine w/ Homemade mayo. It’s just wicked yummy that way. You could also drizzle some EVOO on it for an additional boost of fat!

Pork + Spinach

So… Bonus of being a photographer? My camera rocks… and the continual new toys I get.. My newest one is a new prime lens… So excited.. and of course primal puggle posed for me… well… posing isn’t what I’d call it.. more like she glared at me several times and then ignored me… I guess our kids will one day be the same way? Anyhoo Here’s a little primal puggle “awwww” Action for you.. I know I know it’s been a while… and even longer when it’s been with the nice camera!

Ok back to the blog post… I’m on a spinach kick as most of you know…. {Did you see the Chicken + Spinach Recipe?!}. So here’s an even easier {is that possible?} Spinach-using recipe! Enjoy it!

Ingredients:
• 1lb Ground Pork
• 1 Medium Onion Sliced
• 1/2 a big bag frozen Spinach
• 1 14oz can diced tomatoes
• Garlic powder + Dried Basil
• Salt + Pepper
• Lemon Juice
• Butter, Ghee or Coconut Oil

How-To:
• In a big ‘ol skillet get some butter all melty melty {or ghee or coconut oil}. Add your onions and let them start to soften.
• Add in your ground pork, let that cook for a few minutes.
• Add in spinach, diced tomatoes, Dried Basil, Garlic Powder, Salt + Pepper, A squeeze of lemon Juice.
• Let it finish cooking and you’re done! I find adding a sprinkling of red pepper flakes rocks too.

And for the not-so paleos in your life add in some egg noodles or jasmine rice!

Easy Chicken + Spinach

Well hellooo all my friends! It’s been for freaking ever huh? Sorry about the absence … as some of you guys might have read on facebook, Mr. Not So Paleo and I decided to make some huge structural changes to our two businesses {We’ve separated and re-branded both of them from soup to nuts} and we’re still not done yet! On top of that works just been busy… and so on and so forth. But…. I got a head of work-schedule and I wanted to post this super easy week night dinner for you! Of course it’s weekend approved, but this literally took me 10-15 minutes to make. It was so fast Mr. Not So Paleo was like “wait…you’re done already? That was fast!”. And good, he described it as being filling but light.

I cooked everything on the stove top… but if you’re one of my grilling-obsessed friends… grill your chicken and then get bigger mushrooms and cut your onions into rings and grill those too, then bring it in cut it all up and mix with fresh spinach to wilt it {and the rest of the seasoning!}.

Ok Ready? Here we go!

Ingredients:
• 2.5lb chicken {cut up into bite sized pieces-I used raw chicken, you got leftover pre-cooked use that!}
• 1 Medium Onion
• 1/2 pack of mushrooms
• 1/2 bag of frozen spinach {Mine was chopped-spinach}
• 1 Lemon
• Butter
• Basil {dried or fresh}
• Garlic Powder
• Salt + Pepper

How To:
• In a big skillet add in some butter {don’t be stingy} and then add in your chopped up onion {Chop it however makes you happy} and your mushrooms {Same deal on the chop chop, pre-chopped was on sale this week so I just dumped it in :) }

• Let get all friendly with the butter, then add in your diced chicken, let it cook. When you’re chicken is cooked almost all the way through, add in your basil, salt + pepper and garlic powder to taste. Then dump in your spinach.

• While it’s cooking, add in a wee bit more butter {or a tbsp or so if you’re me} and squeeze the juice of one lemon over. When you’re chicken is cooked through and your spinach is heated it’s done!

Boom, easy dinner right? For your non-paleo crowd add in a side of egg noodles, if doing so make sure you make a bit extra sauce with more lemon and butter for extra noms!

Chicken Scampi Budget Style….

Alright so from what I’ve read of “Scampi” {Shrimp or chicken}.. it’s got a wide array of ingredients.. some of them pricey {Like a good bottle of wine, pepper strips, etc etc}. And we all know I hate pricey and having to buy special for meals.. I mean really? I’ve got enough to do without remember to hit up the grocery store for special ingredients just to make one dinner…

Plus in the end that always means more dishes..and we all know I hate hate hate washing dishes… -Shudders-

So this time, I’ve done it with whatever I had in my house…which most of us always have on hand anyways so it’s kind of an easy / elegant weeknight meal. It works great over a salad, with a side dish of whatever your heart desires …. {Personally I think something chilled like a fresh veggie salad, chilled green beans w/ almond slivers, etc etc would work well … I’m a fan of the hot / cold combination!}.

AND the best part? For your non-paleo counterparts, you can throw on some pasta or some rice…. While it’s cooking… and serve on the side! Easssyyyyy.

Okies you ready for this one?

Ingredients:
• 2 lbs of chicken, chopped into bite sized pieces
• 2 Medium Onions, thinly sliced {Or one big one}
• Butter.. lots of butter {or you could use Ghee}
• Dried Parsley
• Garlic Powder
• Salt + Pepper
• 1 lemon
• Crushed Red Pepper Flakes {Completely optional}

How To:
• In a big skillet add about 1-2 tbsp of butter. When it’s heated add in your onions and sweat them out until translucent {For the love of coffee don’t burn them!}.

• When those bad boys are done, add in your chicken and start to let it cook. Add in your parsley {I did a good tbsp of parsley.. but I love the flavor.. so use as much / little as you want}, sprinkle some salt, pepper, and about a 1tsp – 2 of garlic powder. And squeeze in the Juice of one lemon {If you own a microplane grater, you could first zest your lemon, add that in then squeeze the juice out!}.

• Let it cook until done … Add in another pad of butter or so. Stir…. Add pepper flakes if you like to taste.

BOOM you’re done. Easy right? Easy and stupidly yummy… I’m a lemon addict so I added a LOT of lemon juice…. Feel free to only add half a lemon if you’d like :)

Price Break Down: Chicken was on sale… got the pack for $4.00 + $3.00 {ish} for everything else = $7/ 3 Meals  =$2.33 per meal
Yeah..it’s cheap to make!
