So I’ve been thinking about this a lot recently. I love meat. I do it’s true. I happen to love steak, even when I was a wee lass I loved it. I was the strange 5 year old who would order steak tips instead of a chicken finger basket or whatever other dumb “kids” foods they had. Yeah I was destined to be Paleo..it’s totally true. Ok back to my story…
Here’s my problem… to feed even just one person a good size steak and something to go with it could freaking cost you an arm and half your leg. Never mind you plus a family… Ugg how do you guys do it?
So my solution…. making a smaller cut of meat stretch beyond what it normally would! How you ask?! Haha I’ve got the answer. Most commonly I do some sort of “steak” stir-fry.. with veggies and I’ll throw in a cheaper meat {bacon, sausages, chicken etc} In with it so it stretches that steak just a bit further. It’s not just easy but it’ll save you from having to buy 2lbs of steak just for a salad of some kind, when you could do 0.5lb to a full pound and get the same mileage out of it {and who doesn’t want steak + bacon on their salad?}.
Other things I’ll do is make a few different things with dinner that are cheaper. So I can do a smaller portion of steak and then lets say do a fresh salsa and the sausage stir-fry with it… or I’ll do the steak, avocado and deviled eggs… or egg salad. So something along those lines where you’re still getting what you want but you can reduce the price of what you’d normally spend
Tonight though I will say I impressed myself… I did a steak pizza! Seriously I made a little over 1/2 a pound of steak stretch pretty stinkin’ far. And it was yummy to boot! Seriously My favorite pizza yet.. Want the recipe? Ok ok here it is, pull my leg why don’t ya?
Ingredients:
Paleo Pizza crust {see the “Bread” Recipe.. Same one I use for pizza crust}
1/2 lb steak {I got a regular cut of it}, cut into bite size pieces
Fresh tomato, medium dice
Large Onion – Use either a white or a yellow {sliced thin}
1 Clove of Garlic Finely Minced
4-6 Slices of bacon {remember to make yourself some please!}
Parsley
Salt + Pepper
Coconut Oil
How To:
•Before you start your crust chop up your onions and get those in a pan that’s on medium-low w/ some coconut oil. You want them to get soft and yummy and start to caramelize and it takes a while. Might as well get that going. Make sure to stir it occasionally, so it doesn’t burn!
•Make your crust and pop it in the oven {I’d say 350 degrees for about 7-8 minutes should be good for this particular pizza}
•When you put your pizza in, Put your bacon in a different pan and get that all cooked up {remember to stir your onions!}. While your bacon is cooking you can chop up your steak {remember bite size pieces.. }
•Right about now I’m going to guess your pizza crust is done, Just take it out of the oven and set aside. When your bacon is done put it on a piece of paper towel and set aside as well.
•Put your steak in the bacon grease lovin’ pan and start to cook it season it with some salt, pepper, and parsley {I’m obsessed with steak and parsley.. feel free to use whatever herbs you like}. While that’s cooking,chop up your tomato.
•When your onions are almost done {which should be any second} add in your minced garlic {I’m not a fan of burnt garlic if you no what I mean}
• Assembly time! I put the raw tomato on on the crust and spread it out {this is a no tomato sauce sorta pizza}, add your cooked steak and drippings on top of that. Then layer on your caramelized onions and garlic. Then top that with your bacon.
•Sprinkle on some more pepper and parsley, but back in the oven for another 5 minutes at 350.
•While that was cooking I made a quick salad dressing of Lemon Juice, Olive Oil {1 part lemon juice 2 parts olive oil roughly}, squirt of mustard, salt and pepper and minced garlic. I put it all in a mason jar and just shook it up {I hate whisking things like that..it feels like such a waste of my time you know?} and then I chopped up some romaine lettuce and used one of my home grown cucumbers {man those are good} to make a quick side salad.
Then Enjoy! It was so good and filling! And it was creative way to get what I wanted steak wise without have to spend half my life savings on it 😀
