I think that’s the most boring blog title I’ve come up with yet.. I promise to come up with a much much more interesting one next time! Anyways.. I know I talked about this epic spending money post a few days ago, but it really needs to be broken down into a few different ones because there were a lot of parts to it, so stay tuned!
But when I was food shopping I saw Kale.. and I was like .. Soup! It’s getting cold, I like soup.. therefore.. kale soup it is! This is an adaption from a Rachel Ray Recipe. My mom made it way back when and it was really good, I can’t even find the original recipe. But I wanted a soup that was easy and cheap and wicked filling! Alas, here is what I’ve come up with! P.S I have no idea if this freezes well but I’m going to go out on a limb and say it does.. so if you make it once and like it, the next time make yourself a double batch and you’ll have an even easier week night meal.
- 1 Bunch of Kale {good size bunch.. If they only have smaller ones.. get two}
- Sausage {roughly the equivalent of one package of kielbasa so 5-6 good sized ones or just a long stretch of it depending on how you get your sausage}
- 5-6 cups chicken stock
- 1 Medium Onion
- Salt + Pepper
- Garlic Powder + Hot Red Pepper Flakes
- Butter or Coconut Oil
- Add your butter or coconut oil to a soup pot, while that gets melty chop up your onions and add them into the pan so they start to sweat
- While those are going, chop up your sausage {Or if you find a paleo kielbasa feel free to use that!}, add it in with your onions so it starts to brown.
- Rinse off your kale and start to tear it up and toss it into the pot {I don't use the stem/spine so I work around it and have a discard pile on my counter}. And yes literally use your hands and tear it up, don't do more work than you have with the whole chopping thing..
- Add in garlic powder and pepper flakes, salt + pepper... and this is literally all to preference. You could of course add fresh garlic if you wanted to! I didn't use a spicy sausage, I used a normal one. So if you want to do spicy by all means omit the red pepper flakes
- Add in your chicken stock, put it on low and let it simmer for a half hour to an hour.
Boom its done, enjoy!
Easy I know right? You can try and add whatever you’d like to it.. you could add pieces of chicken too or you could add in some other flavorings. But I really like it as is and it’s super filling!

Umm Honestly I have no idea what it was, but I got the sausage that looks like kielbasa if that makes sense? And Kielbasa is normally pre-cooked, so it probably was.. But I browned it first so if it’s raw it’ll cook anyways at the point / when it’s in the water.

This stuff is awesome! My family, including my husband who hardly eats any veggies, LOVES this stuff. I use Italian sausage like Lynette and add probably triple the kale. We can never seem to get enough kale and I keep adding more and a little more stock and seasonings and it’s always perfect. We make this about every couple of weeks. Thanks for sharing!
