Oh gosh yeah I’m actually posting an update when I said I would…. Crazy right? I have my weekly shopping trip to post { I went a wee bit over board this week… le sigh }. But this is post is in follow up to yesterday’s talk on appetizer-like things for when I go home.
I found out this morning that no one likes dates, erm… well there went that idea. but I was not going to be thwarted! Instead I came up with a stuffed tomato that is a little time consuming {easy, but time consuming}, but oh so yummy.
I made Nom Nom Paleo’s Bacon + Guacamole Sammies. They were yummy, and easy, stupidly easy :D.
And I bought my first bag of fair-trade-organic-totally good for you coffee, I will never ever go back! It’s so good and full flavored {Ok I lied.. I’ll go back to the cheap stuff if I have to to save money}. If you haven’t tried a fair-trade-organic coffee, please go do it asap… you’d be surprised what epic coffee’s your grocery store has!
On to my stuffed tomatoes! {warning, this is for my dairy eating friends… I’m trying to figure out a substitute for the cheese, let me know if you think of one!}
Ingredients:
• 1 container of cherry tomatoes
• Almond meal
• Salt + Pepper
• Dried Thyme
• Goat Cheese
• Olive Oil
How To:
• Pre-Heat oven to 350 {F}
• Wash your tomatoes and then cut a little whole in the top and scoop out the insides {I put all the guts into a bowl and am using them in dinner tonight so it doesn’t go to waste!}
• Set your tomatoes aside.
• In a separate bowl combine goat cheese, a sprinkle of almond meal, Thyme, Pepper {How much of each is really depending on how many tomatoes you’re making and how big they are make less, it’s easier to make more filling than have extra filling and nothing to do with it… well … it could be a snack for you!}
• Get a spoon and start to stuff your tomatoes. If you want to make it really neat and pretty, you could fill a zip lock bag with the filling, make a small cut in one of the corners and use it to pipe in the filling.
{As you stuff them, place them into a baking sheet {better if it has some sides to it to hold the tomatoes}}
• Once all stuffed, sprinkle with some salt and pepper and drizzle a little bit of olive oil. Bake for 10-15 minutes. Let them cool for a few minutes.

I’m wondering what other kind of cheese would be a good substitute, my picky husband hates goat cheese. :/
Hmmm you could try feta cheese, and just buy a block cut it up into pieces that’ll fit in…. you could though cut up cheddar or something similar into tiny cube. The cheddar might melt well where as the feta will do a mini-melt. Let me know which you try!
I was wondering about the almond meal; is it absolutely necessary? I’d imagine since this is on a budget blog that its not too price but I’m trying to narrow down things to buy because I end up buying things and wasting them and it kills me! Do you think it would be okay with out it?

It’s not totally necessary — And you could absolutely make them without the almond meal 🙂 However if you do have some raw almonds {or really any raw nut} floating around you could grind them up really finely on your own and use those in here to make things really cost effective for you 🙂
