Seriously I was going for a non-nut cookie, and what I got was these wicked yummy things. They are like a cake a cookie a muffin and a pancake had a baby. But they remind me the most of cake. I did these plain but feel free to add dried cranberries, chocolate, coconut flakes, etc to them! {Or even drizzle some chocolate on top..yumm}
Ingredients:
• 3/4 cup coconut flour
• 1 cup coconut milk
• 1/2 tsp baking powder
• 1 tsp cinnamon
• 1/2 tbsp Vanilla
• 2 tbsp Honey
• 4 eggs
• 1/2 tsp salt
• 2 tbsp Coconut oil
How To:
• Preheat your oven to 350 degrees.
• Sift your coconut flour, salt, and baking powder into a bowl. Add in your eggs and coconut milk and whisk it together {you could use the mixer, I did it by hand though}.
• In a bowl, melt your two tbsp of coconut oil. Add that along with everything else into the bowl. Mix it all together
• Lay down some parchment paper on a cookie sheet, and grease it with either coconut oil or extra light olive oil. I used a 1 Tablespoon icecream scoop and scooped out little balls of cookie dough. They don’t really spread out so you can pack them in.
• Wet your fingers and just gently press down on the cookies so they flatten out a little.
• Bake for 10-12 minutes, let cool and your done!
I just made these. They came out a little crumbly, but very fluffy and tasty! Great coconut flavor. Def a great sub for a sweet treat.

Have made a few times. Very good with fresh blueberries added to batter. Great alternative to cookies that usually require a lot more honey or sugars. Sorta dull just plain, but this a great base for adding flavors, like blueberries, either to batter or as toppings
When it says “Coconut Milk”, is that the beverage kind or the canned kind?? I don’t really know the difference and am new to Paleo. These look amazing!
Heyy April! I use the canned kind for this, but I use the Trader Joe’s brand…so it’s “light” So it’s thinner than the full fat… So if you used the full fat canned you might either need to use extra or thin it out a smidge with water 🙂
Usually not a big recipe commenter, but made these and really love them! I believe they are a really great low-glycemic dessert for paleo.
I do agree they are probably a little better with added fruit or flavor. I added blueberries and think I would maybe add a little lemon next time. I also used coconut nectar instead of honey.
Question/comment-mine were pretty “wet” and were in a lot longer than 12 minutes, but eventually they did set. Just in case that happened to anyone else.

I made these this evening and they were wonderful. In reading the comments, I like the idea of adding fruit like raspberries and maybe a little lime zest. It’s a great “base” to add to.
I followed the recipe and the batter was very thin, not like a cookie batter at all. How did you all have such success?

Hmmm Maybe it was coconut flour? Or it was the coconut milk you used?
Next time you could try either adding in less of the coconut milk or more of the coconut flour! {I’d probably try upping it to a full cup of coconut flour and seeing how that works}!
