You totally read that right… This is my all time favorite comfort meal. Even Mr. Not So Paleo finds this meal way more comforting than anything else I make. And it’s easy like beyond easy. This meal has beef in it, but if chicken is more of a comforting food for you, use that, use pork, use turkey. Whatever floats your boat is going to work here. Just like the mushrooms, if something else makes you happy and feel all relaxed, use that! This is more a method then a “recipe”!


- • 1 lb beef {I bought a big piece of steak and cut it up!}
- • 1 big onion
- • 2 Sweet Potatoes
- • Butter, Olive Oil
- • 2 Roma Tomatoes, big dice
- • 1/2 8oz pack mushrooms
- • Parsley, Garlic Powder
- • Salt + Pepper
- Preheat your oven to 375 degrees {F}
- Chop up your Sweet potatoes into bite sized pieces {I kept the skin on}. Drizzle some olive oil on them salt + Pepper and roast them for 30-40 minutes. Until they’re cooked and crisp {not burnt!}.
- While it’s cooking, carmalize up some onions in butter {or bacon fat or coconut oil}, when they’re almost done add in your mushrooms.
- When your sweet potatoes are about 10 minutes away from being done, cut up and toss in your steak let it cook to your liking, add in a big dash of parsley, wee bit of garlic powder, salt + pepper.
- When you’re sweet potatoes are done, add them into the pan, give it a stir {Add in as much as you want, you don’t have to add in all of it. I like to have left overs of the sweet potato cooked like this for breakfast the next morning, snack after a workout, etc!}. Serve it up in a bowl, sprinkle on your tomatoes on top.
- Boom, all done! Enjoy 🙂
– I like to make a thinner mayo and drizzle it over the top and then mix it up all together, it almost has a chicken salad feel {w/o the chicken} if you kinda get what I mean.

We tried this tonight it was sooooo good and so simple to make. Even my super picky hisband enjoyed it. This is definetly our newest addition to weekly dinners thank you!
