Alright so from what I’ve read of “Scampi” {Shrimp or chicken}.. it’s got a wide array of ingredients.. some of them pricey {Like a good bottle of wine, pepper strips, etc etc}. And we all know I hate pricey and having to buy special for meals.. I mean really? I’ve got enough to do without remember to hit up the grocery store for special ingredients just to make one dinner…
Plus in the end that always means more dishes..and we all know I hate hate hate washing dishes… -Shudders-
So this time, I’ve done it with whatever I had in my house…which most of us always have on hand anyways so it’s kind of an easy / elegant weeknight meal. It works great over a salad, with a side dish of whatever your heart desires …. {Personally I think something chilled like a fresh veggie salad, chilled green beans w/ almond slivers, etc etc would work well … I’m a fan of the hot / cold combination!}.
AND the best part? For your non-paleo counterparts, you can throw on some pasta or some rice…. While it’s cooking… and serve on the side! Easssyyyyy.
Okies you ready for this one?
Ingredients:
• 2 lbs of chicken, chopped into bite sized pieces
• 2 Medium Onions, thinly sliced {Or one big one}
• Butter.. lots of butter {or you could use Ghee}
• Dried Parsley
• Garlic Powder
• Salt + Pepper
• 1 lemon
• Crushed Red Pepper Flakes {Completely optional}
How To:
• In a big skillet add about 1-2 tbsp of butter. When it’s heated add in your onions and sweat them out until translucent {For the love of coffee don’t burn them!}.
• When those bad boys are done, add in your chicken and start to let it cook. Add in your parsley {I did a good tbsp of parsley.. but I love the flavor.. so use as much / little as you want}, sprinkle some salt, pepper, and about a 1tsp – 2 of garlic powder. And squeeze in the Juice of one lemon {If you own a microplane grater, you could first zest your lemon, add that in then squeeze the juice out!}.
• Let it cook until done … Add in another pad of butter or so. Stir…. Add pepper flakes if you like to taste.
BOOM you’re done. Easy right? Easy and stupidly yummy… I’m a lemon addict so I added a LOT of lemon juice…. Feel free to only add half a lemon if you’d like 🙂
Price Break Down: Chicken was on sale… got the pack for $4.00 + $3.00 {ish} for everything else = $7/ 3 Meals =$2.33 per meal

I have a question..I’m new to the whole paleo life…but in all my books it says no to butter. I couldn’t help but notice you said..lotssss of butter! I’m confused! 🙁
Heyy! I completely understand I felt the same way when I first went paleo 🙂
If you haven’t completely eliminated dairy from your diet I might be a good thing to try for 30 days just to see how your body handles it. After that you can try adding some dairy ( such as raw cheese and milk. High quality grass fed cow products. Butter, etc) to see how your body does. If it makes you feel icky in any way I’d just steer clear of it. However butter can sometimes be a different ball game. If you can’t do dairy at all, I’d try a clarified butter (ghee) as its just the fat without the milk solids!
I personally think a high quality grass fed cow butter is fine. But my body handles it really well so I use it. A lot of paleos will now a-days as well! It’s yummy and a fabulous source of fat! I’d suggest getting something like Kerry gold butter to start with. They make amazing wicked good quality butter.

I just made this and its DELICIOUS!! I used frozen onions instead of fresh chopped, I will use fresh next time because the frozen made a LOT of extra water. It’s very good though, I’m impressed! Will add this to my list of nom-nom recipes! Thanks for sharing!
