I know, I know it’s a lame title! But I have no idea how to describe this other than it’s ground pork and veggies! This is kissing cousins to one of my favorites {that I really need to make more often}: The Yummy Baked Thingy. Who remembers that recipe, show of hands? Yeaaaaa you liked it, I know you did!
Now this recipe is a bit more “grown up” and it’s one of my new favorites because it can be made three different ways {I totally lied on facebook — sorry!}. You can either make this and bake it in the oven {like I’ve done in the pictures}, bake it in the oven and add cheese on top the last 5 minutes {like I’ve also shown} OR you can just make the whole dang thing in a skillet if you want a super quick, filling dinner! No matter what your time budget is you can totally rock this out and have yourself a very happy tummy!
And I know I totally owe you a kitchen tour post — it’s coming I promise! I’m just still not happy with my kitchen set up, going to devote a day to re-organizing it this week!
P.S. This recipe served just Mr. POAB and I for dinner last night — we were both starving and that’s all we had {with a bit of raw, fermented sauerkraut}. If you let’s say serve this with a salad or a side dish or you weren’t starving before you eating you could easily serve 2-4 people!
- Butter, Ghee or Coconut Oil {lots of it}
- 1 Medium Onion, Medium Dice
- 6-8 oz frozen green beans
- 1 lb ground pork
- 1 pint cherry tomatoes, cut in half
- salt + pepper
- 1 Tbsp dried rosemary
- 1 tsp ground cumin
- ½ tsp garlic powder
- • 3 Tbsp apple cider vinegar
- • 3-4 Tbsp slivered almonds {optional}
- • Raw or grass fed cheese, sliced thin / shaved {optional}
- If you're going to be baking this, preheat your oven to 375 {F}
- In a large skillet get at least a tablespoon of your fat of choice heating and add in your onions. Let those soften for a few minutes.
- Then add in your green beans, let them cook for a few minutes then add in your ground pork.
- While they're all happy together in the pan, wash and cut up your cherry tomatoes. Then add them in.
- Add in your spices, herbs, salt + pepper and apple cider vinegar. If you're using slivered almonds you can add those in now too.
- ****If you're not baking this and just want to use the skillet, finish cooking it here and serve! Enjoy :)****
- Once everything is about 75% cooked through you can add it to a medium sized lasagna pan {or any baking pan with high sides}. Then I like to dot it with some more butter on top, but you can just use the same fat of choice from earlier!
- Then bake in your oven for 20-30 minutes until the top is browned and it's cooked through.
- If you'd like to add cheese to this, when you're about 5-10 minutes away from being done, add some thinly sliced cheese on top and let it finish cooking until your cheese is melted to your liking. If you like it really brown and bubbly you might want to stick this under your broiler for a minute or so just to crisp it up!
- Serve and enjoy!
