Well hello there!! Happy Wednesday, it’s actually been a stellar day! Today was our very own Mr. POAB’s Birthday! We totally got his favorite for dinner {sushi} and then I think Apple found out it was his birthday because they released the new iOS7 today….so needless to say we’ve both been geeking out on our iPhones and iPads since we got home! And I’m in LOVE with iTunes Radio! Along with how cool everything looks! I swear it’s the little things like this that make me a happy girl.
Speaking of me being a happy girl, did you read the title of this recipe?! I think it pretty much says it all. It’s yum in a butternut squash, and with the time of year it is I promise you’ll be able to find the chicken, apples and butternut squash for a really good price! Heck, I fresh picked my apples the day I made this {gotta love living in New Hampshire!}. This recipe was inspired by George at The Civilized Caveman’s recipe: Bacon Beef Butternut Squash. I seriously make that at least two or three times a year, it’s probably my favorite recipe of his!!!
My favorite part about the Chicken-Apple part of the recipe? It makes extra! Which means easy breakfast for someone tomorrow morning or save it and toss it into a stirfry tomorrow night as a special little add-in. Not to mention, if you have someone in your family who hates butternut squash, you can easily serve them just the filling and give them either a side salad, roasted sweet potatoes or some kind of veggie {maybe green beans? or roasted broccoli?}. Chicken Apple Stuffed Butternut Squash

Ingredients
- 1 Small to Medium Sized Butternut Squash
- Your favorite fat {I used Bacon fat + Butter {cause it’s amazing that’s why!}}
- 1 Medium onion, finely diced
- 6 oz of mushrooms, cleaned and chopped into bite sized pieces
- 1lb boneless, skinless chicken breast, cut into bite sized pieces
- 1 Medium to large Apple {depending how much you like apple}, cut into bite sized pieces
- Salt + Pepper
- Dried or Fresh Rosemary, about 2-3 tsp.
- 1-2 tsp. Dried or Fresh Basil
- 2 tsp. Apple Cider Vinegar
- 1 tsp. Dried Thyme
- 5 Breakfast-Link Sized Sausages, Cooked and cut into bite sized pieces
- {I used Applegate Farms Chicken Apple Sausages!}
Instructions
- Preheat your oven to 375 {F}
- Chop the ends off of your butternut squash and split it long ways down the middle. Then scoop out the guts and seeds of the bottom half {if you’re in the mood, you can save the seeds and roast them up for snack time this week!}
- Place them both halves face down { skin side up} in a shallow baking dish {that has sides} and filling it to about a 1/4-1/2 inch of water in the pan. Place it in the oven and bake for 30-45 minutes until the side that’s facing down is roasted and fork tender in the middle!
- Filling: While that’s all getting yummy, make your filling!
- Heat a big skillet with your fat of choice and add in your onions and mushrooms, you know the drill — let them hang out and start to soften. While that’s happening chop up your apples.
- Add in your apples and then chop up your chicken and add that in. Let it all cook.
- When it’s almost done add in your spices, apple cider vinegar, salt + pepper and sausages. I also at this point added in more butter, because well …. everything taste better with more butter!
- Let it finish cooking, taste test and adjust seasoning as needed.
- If it finishes before the BSquash, just turn off the stove and let it sit on the back burner.
Notes
This filled two halves with leftover filling — my butternut squash was a medium-small sized one, but if you use a really big one you might need to make extra filling!!
P.S. You’ll notice that I didn’t add back in the inside of the BSquash, save it and use it as a side dish tomorrow night! That means that this already affordable dinner just did double duty for tomorrow night — yupp, that’s what we call an epic win my friend, an epic win!
And I totally rocked this out with some Apple Sauce on top!
