I think by now we all know I have the worlds biggest obsession with stir fries. They’re easy, cheap and quick to make. Not to mention they’re yummy. And I love yummy food — especially when I don’t have to spend half my life in the kitchen making it. Because let’s be honest — as much as I love cooking + food, I also have an obsession with fun, pretty things and watching an entire season of a new t.v. show in record time.
In case you’re wondering the latest T.V. Show in my house is Veronica Mars {It’s Free if you have Amazon Prime!}. I got to say I’m loving it so far!
Oh and in some fun news — I got myself some new canisters for my Almond + Coconut Flour! They’re chalkboard signs and I think they’re WICKED pretty! I promise to take pictures and show you guys!
Actually — after talking with a bunch of bloggers last night Kelly from A Girl Worth Saving {P.S. — AMAZING blog!} mentioned doing grocery store haul videos or a what’s in your fridge video. Hello — AWESOME idea! I’m so doing it and I’m thinking about a kitchen tour video {but first I need to clean my kitchen}! Should be lots of fun headed your way.
Speaking of fun — I still need to do a “let me re-introduce you to the site” post — but I kind of have to finish the site before that post happens. But isn’t she pretty so far — she’s so clean and easy to use and sparkly! Did I mention pretty? Heck yeah she is!
Ok — before I go on a total ramble about how much I love my blog and her prettiness, let me just give you the recipe!
Don’t forget, use what you have on hand and if you have ground chicken / turkey you could totally use that instead of pork! I don’t think beef would work to well here but heyy you could always try it and let me know how it goes!

Pork + Pepper Stir fry
Prep Time: 15 mins
Cook Time: 15 mins
Total Time: 30 mins
Yield: 2-3

Ingredients
- Fat of choice {butter, coconut oil, bacon grease, etc}
- 1 medium onion, medium dice
- 1/2 12 oz pack of mushrooms, cleaned, de-stemmed and medium dice
- 1 bell pepper, big dice
- 1/2 green apple, medium dice
- 1lb ground pork
- 1-2 tsp. of your favorite dried herb
- 1 tsp. dried cumin
- 1 Tbsp. Apple Cider Vinegar
- salt + pepper
Instructions
- Get a big skillet heating with your favorite cooking fat.
- Chop and drop your onion, mushrooms, pepper and apple into the pan.
- Let it start to cook a little, then add your ground pork and combine everything.
- After the pork is about half way cooked add in your dried herb, cumin, apple cider vinegar, salt + pepper.
- Let it finish cooking — taste test and adjust seasoning as needed.
