So I was going to have this up last night for you guys but I couldn’t find the memory card with the pictures and then I found it and started editing pictures for this post + the new book and well to say I got side tracked would be a wee bit of an understatement. But never fear — it’s here! And I’m rhyming, that must be a side effect of doing too many dishes because I’ve been cooking so much.
And seriously — I’ve been cooking a TON. Some of you guys might have seen my kitchen disaster on instagram, but trust me, it’s only gotten worse since! Lucky for me that this time around I have a dishwasher that works! And before I keep rambling about the book I’ll stop and just do a separate post over the weekend with some updates 🙂

I should probably talk about the food now huh? Yeahhhh. So I was making something for the book and needed a side dish that night but I didn’t want normal mashed sweet potatoes and I was way to hungry to wait for the sweet potatoes to roast up! And here’s the Liz factor – I wanted something Springy/Fresh but filling. I know, mashed sweet potatoes being springy is a weird thing but go with me on this one! I added lemon juice and scallions to give it a fresher feeling and added the sausages to make it more filling. And it turned out to be beyond amazing. Honestly thought you could add whatever you wanted meat wise in — I think leftover burgers, chicken, roast, etc would taste really good here.
AND this doesn’t have to be a side dish *gasp* it can be lunch or breakfast! So if you have leftover mashed sweet potato try adding some of these things in and taking it for lunch tomorrow!

Mashed Sweet Potato Mix
Prep Time: 10 mins
Cook Time: 15 mins
Total Time: 25 mins

Ingredients
- 1 medium sweet potato {mashed}
- fat of choice
- scallions, finely chopped {to taste, I used about a tablespoon or so}
- 4 oz favorite sausage, chopped
- lemon juice
- salt + pepper
- 1 tsp. cumin
- 1/2 tsp. garlic powder
- 1 tsp. dried basil
- 1-2 tbsp. favorite chopped nut {optional}
Instructions
- Chop up your sweet potato into chunks {I kept the skin on} and add it to a pot of water and let it boil on the stove.
- While it’s going cook your sausages or reheat whatever meat you’re going to use {or you can leave it cold — whatever works for you as long as it’s cooked!}
- Chop your scallions up and set those aside along with the meat.
- When your sweet potatoes are fork tender drain them and add in as much of your favorite fat as you want and mash them up to your favorite level of mashed.
- Add in your spices + herbs, salt + pepper, scallions and sausage and mix it all together well.
- Here’s the part that’s super personal preference – if you’re a huge lemon fan like me you can just add in a 1/4 of lemon’s juice straight away but if you’re not sure if you’ll like it add in a good spritz, then mix and taste and keep adding it in until you’re happy with the level of citrus!
- When taste testing double check your seasoning and adjust as needed!
