Do you ever have those days where you want something really special for dinner but you don’t want to spend the $20+ per a person at a restaurant to do it? Yeah well, join the club — I feel like that at least once a month at least, ok maybe once a week … sometimes twice a week!
But with having just finished book#2 on Thursday, having a sick puppy all of last week {hello puppy allergies!} and shooting a triple booked weekend and having my sister over for most of the weekend {because she’s the coolest kid around and runs the photo booth 😉 } I needed something that said “special” but didn’t have the price tag.
Not to mention I’ve had a mental obsession with steak and goat cheese recently so on Tuesday I was all “I’m making this and there’s nothing anyone can do about it” and holy smokes am I happy I made this — it is SO good. Like so good Mr. POAB was in love – which automatically makes it a winner! And because you’re more than likely going to have leftover goat cheese I’ve got a breakfast recipe headed your way this weekend that utilizes it and the walnuts! Who knows, there might even be a third recipe!
Now for our little goat cheese discussion … some of you guys are going to be all “Liz, it’s dairy — it’s not Paleo”. Yeeaahhh it’s gray area to be honest, and it’s a “if your body likes it” sort of deal. For me personally, my body Hates {with a capital “H”} cows milk cheese and milk. It gives me allergies and it makes me get these not so sexy little pimples all around my chin and cheeks. Goat cheese though for some reason is totally fine. I don’t eat it a lot – in fact this is the first time I’ve had it in a few months – but when I do it eat it I don’t get the same reaction. I might sneeze once or twice but I don’t feel like I have an allergy infection or get those really not so pretty pimples. So if you haven’t tried it before it might be something to experiment with!
However, if you’re 100% anti any kind of dairy just substitute the goat cheese out for your favorite tangy/salty food. It could be a dried fruit {maybe cranberries?} or you could just leave it out entirely, the salad will still be amazing!
And yes — you’re reading the ingredients right, this salad is SUPER simple. All of the ingredients are really flavorful so I wanted them to stand out and not get masked by other flavorings!
As something new, I’m going to start mention at the bottom of the post what these would meal plan well with and some tips — so make sure to check out the bottom of the post for the deets!
- Fat of choice
- ½ a large onion, thinly sliced
- Salt + pepper
- 1.25 lb of steak, cut into pieces
- 1 head of romaine lettuce, washed and chopped {or your favorite lettuce}
- ½ {6oz} package of raspberries, washed + cut in half
- ¼ {8oz} package of goat cheese
- Handful of walnuts
- Olive oil
- Balsamic vinegar
- Get a large skillet heating on medium-high heat with your favorite fat {around a tablespoon or so}.
- Add your onions in and give them a small sprinkling of salt.
- Chop up your steak - once it's ready add it into your pan and add in a little more salt + pepper as well as a wee bit extra fat! Let it cook to your favorite level of done!
- While the steak is cooking just wash and chop your lettuce and layer it on your plate{s} Then wash and chop your raspberries. You can either set them aside and wait for the steak to be done or you can start to layer it on your plate {I've done it both ways and it makes no difference on flavor!}
- When your steak is all done add it on top of your lettuce. Then layer on if you need to your raspberries.
- Sprinkle on your goat cheese and walnuts and then simply dress with a drizzle of both olive oil and balsamic vinegar to taste!
- Enjoy!
Meal Plans well with:
• Paleo Comfort Meal – just cook double the amount of steak and store the extra amount in the fridge.
• Chili – make extra steak and use to add into any Chili Recipe to speed up the cooking process!
• Stir Fry – again cook up double the amount of steak and just reheat along with a bag of steam fresh vegetables, mix together and boom – 5 minute dinner!
This looks delicious – honestly going to try this as soon as I can. I wish steak wasn’t so expensive – I shouldn’t look at recipes when I’m hungry.
Hahah Mark I totally understand! You can buy almost any cut of on-sale steak and just chop it up into pieces! That’s what I do most of the time because there is no way I’m spending $10+ per a pound!
Haha yeah definitely, and when you do it’s so difficult to not just fry the thing whole with a load of buttery mushrooms and veg on the side. Following that reflection, I think I’m gonna have to have steaks this weekend. If i can bring myself to chop it up into a goats cheese salad I’ll have to let you know!
My partner and I stumbled over here coming from a different web page and thought I
might as well check things out. I like what I see so now i’m following you.
Look forward to exploring your web page yet again.
I am trying this today i made a little weekly “meal plan” sorta thing with some of these recipes they are all so appealing! I dont have balsamic vinegar thats the only thing i forgot. any suggestions on another paleo health dressing to add? I may just do the olive oil and see how it is!
