So I think the weirdest thing about starting to eat really healthy {or “cleanly”} is the whole you can eat whatever you want for breakfast. No longer are you kept to your craptastic cereal and toast as your breakfast — your fridge is literally your oyster. Which translates to eating Salmon, Soup, Steak, Salad, etc, etc for your first meal of the day! Pretty rocking right? I know!
Before I jump into the recipe I want to give you the 411 on a little something I found yesterday — warning, if you’re not a fan of Target or stores like Target just skip this section! So at Target {again…} yesterday I was browsing through the food area and found Frozen, Wild Caught Salmon {Simple Balance Brand}. I kid you not, it was pre-portioned ready to cook Salmon. Did I mention it was wild caught? HELLO — AMAZING. What’s more amazing? It was $10.00 for 5 fillets. which is about $2.00 a serving OR you could look at it as the bag was 1.8 pounds = $5.55 /lb. I cannot even handle how much I love that price tag.

Ok … on to other things … not Target related …. I wanted a breakfast recipe that was pretty rad and went well with an optional sunny side up egg and this fit the bill. It literally takes minutes to put together and then just bakes in the oven. You could even make this tonight, let it bake while you’re eating dinner and have it for breakfast in the morning. For cereals this is the craziest, easiest thing ever. Bonus, if you don’t like salmon you can use the herb mixture on any kind of fish. In fact, the herb mixture I have listed will make too much for what you need, so just save it and the next time you make this or need a fresh, fun herb mixture you’re ready to go!
As far as the salmon goes – Wild Caught is always the best option {and honestly the only one I go with when I’m eating fish}. And yes, wild caught can get pretty pricey — which is why I’m gearing this towards breakfast. It’ll allow you to have something a little more pricey without needing a large serving of it, keeping the cost done and still allowing you to enjoy it!
And I know I keep going on and on about this being for breakfast. But if we’re being honest you could totally make this for dinner and serve it with whatever makes you happy! Just remember to add a side dish and that you might need either to have two side dishes or increase how much salmon you’re serving per a person!

Salmon for Breakfast!
Prep Time: 5 mins
Cook Time: 15 mins
Total Time: 20 mins
Yield: 1
Ingredients
- Butter, Ghee or Coconut Oil
- 1 Salmon Fillet {4-5oz}
- 1 tsp. dried thyme
- 1/2 tsp. garlic powder
- 2 tsp. dried dill
- Salt + pepper
Instructions
- Preheat your oven to 350{F}
- Grease the bottom of your baking dish with your butter, ghee or coconut oil.
- Rinse your salmon under cool water and pat it dry. Then place it flesh side up in your baking dish.
- Dot the top of it with your butter, ghee or coconut oil {mine was still cold so it was literally just dots of butter on the top of it!}.
- In a small bowl mix your thyme, garlic powder, dill, salt + pepper. Mix it all up.
- Sprinkle a thin layer over your salmon fillet – store the remaining herb mixture to use at a later point.
- Bake in the oven for 15-20 minutes or until your salmon is cooked to your liking.
- Serve with either a fried egg or favorite breakfast item and Enjoy!
Meal Planning Ideas:
• Try Pairing this with the mashed Sweet Potato Mix if Serving for Dinner — and make extra sausages for breakfast the next morning!
• Don’t like fried eggs? Try the Herb Scrambled Eggs {and you can totally leave out the goat cheese!}
Yeahhhhh there’s nothing that gets me out of bed quicker than knowing I’ve planned an awesome breakfast. Left-over curry or some stew or something like that. Brilliant recipe, I’d love some salmon first thing when I wake up :).
