Woohoo it’s Wednesday! And what better way to celebrate than with a recipe right? Exactly!
Before we head into the post and me oohing and ahhing over fish I wanted to let you guys know about my super big news in case you didn’t see it up on Facebook or the blog recently.

My boss-status sister, Toriee is going to be joining the POAB team. What, crazy right?
She’s going to be taking over the store deals we all love so much so they get up online weekly when they should {and you know, not accidentally get skipped because I’m knee-deep in editing photos and forget there’s a world outside of lightroom…!}. She goes through her “official” training next weekend when she visits me so you can expect her to start taking over in about 2-3 weeks! I’ll do a whole “welcome Toriee” posts so that way you guys get to meet her and you can get the deets on how to say hi to her and welcome her 🙂
The coolest part of this? We can now add in more stores!! After a recent post on Facebook I learned you guys like to shop at Aldi, Costco and a few other stores so I’ll be adding those into the mix — and if between now and then you’ve got favorite stores email me {liz@paleoonabudget.com} or leave a comment down below so I can add it into the rotation!
And now back to our normal story — Fish Stir Fry!
Can someone please explain to me why it took me SO long to realize that I could do this? It’s the easiest thing ever and makes what should be an expensive amount of fish into a cheap, filling dinner! No joke — because you mix in some vegetables and the optional zucchini noodle this goes from somewhat filling to I can’t walk I’m so full. And because of all the vegetables people who don’t like fish as much might not notice it — meaning me, a non-over the top fish lover cannot stop eating this.
Just like in the recent Salmon for Breakfast Post I used the frozen wild caught fish from Target…I have a ton of it in my freezer because it was on sale recently!
Literally to make this dish I thaw it out, chop, dump, cook, eat. And the best part is that most grocery stores actually carry wild caught frozen fish these days — so you can easily stock up at your favorite store and make this whenever you have no idea what else to make. Which if you’re anything like me is more often than not!
And literally use whatever fish you have on sale or in your freezer {or heyy maybe you caught this morning because you’re super awesome} and whatever bag of vegetables you have on hand! The coconut aminos {<– aff. link} are totally optional but make this extra yummy — and if you haven’t tried coconut aminos yet — now would be a seriously epic time to do so! They’re way better than soy sauce or Tamari could ever hope to be!
Now that I’ve given you the 411, caught you up to speed on Book #2, told you all about Toriee — let me give you the recipe!

Fish Stir Fry
Prep Time: 5 mins
Cook Time: 20 mins
Total Time: 25 mins
Yield: 1-2
Ingredients
- Fat of choice {I used butter}
- 12oz frozen bag of vegetables, your favorite one! I used a mushroom, onion, carrot, snow pea mix.
- 2 6oz fish fillets {any white fish, tuna, salmon or swordfish will work!}, cut into bite sized pieces
- 1 tsp. garlic powder
- 1-2 Tbsp. favorite seasoning blend {I used Italian Seasoning}
- Salt + Pepper, to taste
- Coconut Aminos, to taste {optional}
- Zucchini Noodles {optional}
Instructions
- Get a large skillet heating with your favorite fat, I used Kerry Gold Butter!
- Once your skillet is ready, add in your frozen vegetables and let them cook.
- While that’s cooking wash under cold water, pat dry and chop your fish fillets up.
- When your vegetables are almost cooked through, add your fish, seasoning, salt + pepper and coconut aminos and let it all cook.
- Once it’s all cooked you can add in a little more fat if you’d like {it’s highly suggested because it tastes so good!} and a few dashes of coconut aminos!
- Serve with your side dish of choice and enjoy!
