Hello my peoples! It’s Monday, and Monday’s are a serious drag around here — it’s normally the day I answer a million emails, package stuff for the post office, catch up on paper work and try to work in as much puppy snuggle-time as possible. Well this Monday has been especially crazy because I’m still a little out of it from the weekend. Why? We had a double booked weekend for wedding photography + the puppy is going through more allergy issues AND grocery shopping yesterday was a mess because my favorite grocery store is having a protest {you can see the Facebook post about it HERE} which translates to they had no fresh produce or meats, so I had to go to the expensive store just to get some meat for the next few days.
And right now you’re thinking — Liz don’t you have a stock pile … why yes, yes I do, normally. Lucky us that last week was Freezer Dump week – which means we didn’t grocery shop at all for maybe 10 days{ish} and used almost all the stuff in the freezer …
Worst timing EVER.
So how do I make this all better? With cookies and coffee, duh.
And before I get into all this cookie business one quick housekeeping bit of info: {You might have missed it in my last post} — my sister Toriee is joining the POAB team {and by team I mean myself, the official taste testers Mr. POAB and the dog, plus the cat who offers no moral support but is totally adorable so I keep her on staff}. She’s going to be running the weekly store deals and will pop around on social media and heck she might even start instagraming … so stay tuned for the huge Welcome Toriee post I’m working on! Trust me — you’ll LOVE this kid, she’s hilarious and way too cool for school.
And now onto the cookie…
The best part about this cookie is that you can control how “coffee” it tastes — I like it so it doesn’t taste very coffee-like but has this awesome hint of warmth/flavor, letting all the flavors basically make a huge party in my mouth. But let’s say you want a super big taste of coffee, you can brew a short pot of really strong, dark/french roast coffee. Me? I did a medium-blend and brewed it strongly. Coincidentally this is also the perfect kind of coffee to chill and later make ice coffee with … you’re welcome. So basically, make these a few times with different kinds and strengths of coffee to find the one that makes the cookies taste extra amazing to YOU.

Chocolate Coffee Cookies
Prep Time: 10 mins
Cook Time: 12 mins
Total Time: 22 mins
Yield: 12
Ingredients
- 3 large eggs, lightly beaten
- 1 cup almond flour
- 1/4 cup maple syrup {make sure it’s the good stuff!}
- 1/2 cup raisins
- 1/2 cup chocolate chips {my favorite is the enjoy life chocolate chips}
- 1 tsp. vanilla extract
- Pinch of salt
- 3 Tbsp. coconut flour
- 3 Tbsp. freshly brewed coffee, that’s been allowed to cool a little
Instructions
- Preheat your oven to 375{F}
- In a large mixing bowl add your eggs and beat them a little, then add in your almond flour and mix well.
- Add in your maple syrup, chocolate chips, raisins, vanilla extract and a pinch of salt — mix well again.
- Add in your Coconut flour and mix it really well, the batter should thicken up a lot at this point.
- Add in your fresh brewed coffee and mix well again.
- Let the cookie dough sit for a few minutes on the counter and prep your cookie tray by lining it with aluminum foil.
- Using a tablespoon measure scoop your cookie dough out onto your aluminum foil {I did a “heaping tablespoon”}.
- Use your finger to flatten cookies out slightly and then bake for 10-14 minutes, until your cookies are golden brown on the edge and firm to the touch.
- Allow to cool and then dig in!

Is there anything I can sub for coconut flour?
Paleo on a budget? Almond flour is just under $10 a pound! I mean no I’ll respect but it seems you aren’t quite sure what “budget” means to most people. It does not mean unlimited. I see so many of these sites consider $200 a week a tight food budget when in reality $400 a month is living high on the hog for most people. Many of us are lucky to have $200 for the month. I am sure these recipes are awesome but why can’t anyone come up with true budget dishes.

I totally understand that things like almond flour can get expensive — but these cookies are meant to be a treat not an every day occurrence! And almond flour can actually be bought for a great price! Brands like bob red mills go on sale frequently and if you keep an eye out you can find coupons for them! And you can store it in the freezer so it stays fresh for up to 6 months! So that one bag of almond flour can really, really stretch making it not too much of a splurge! Not to mention, one bag can get you at least 4 batches of cookies!
And you can always make your own almond flour when money is really, really tight.
And just to clarify I don’t spend $200/week on food. I’m lucky if I can spend $100/week on food — and that’s really stretching my budget! Most of my dishes are really, really budget friendly and utilize leftovers or create leftovers so you can use it multiple times! I hope you stick around and check some of other recipes! And let me know if you ever need help making something a bit more affordable!!

It’s a snowy day here in Colorado, so my daughter and I decided to try these cookies again. As I was all out of coffee (blasphemy), I substituted Art of Tea’s Chocolate Monkey Rooibos tea. They still came out super yummy and flavorful, fragrant almost. This is definitely my go-to cookie recipe from now on. Up High!
Can the Chocolate Coffee Cookies be frozen?
Have made these twice now! Love them. I get about 24 smaller cookies out of the batch, and don’t flatten them so they have a “cake-like” texture. So delightful :). Thanks for the recipe. Trying you bacon ones next week!
Is there a reason why there isn’t any oil/fat in these? Just made them and they are not coming up easily, I did use parchment paper instead of foil though. Regaurdless of that issue I just tested one and YUM!!!
Just made these during my kids naptime, adding half of a ripe banana from the counter. The kids woke up and skeptically taste tested them only to devour and beg for more! 2 and 4 year old enthusiastically approved!
