Heyy you! It’s Friday — and what better way to kick off an end-of-Summer weekend than with a new recipe. More importantly, it’s Mango lime chicken. This is the kind of meal that when I know I’m making it, I happy dance around the kitchen. It’s both awesome and hilarious — I totally suggest you get one of the dances, because it makes you extra cool. Ok – maybe not extra cool but you know what I mean!
My favorite part is that this recipe literally took me 10 minutes to put together — mainly because I have a new obsession of pre-baking a pack of chicken at the start of the week. I use the chicken in stir fries, for breakfast, snacks, in a salad for lunch. I spend an hour a week {if that} making the chicken, pop it in the fridge and boom – done. I don’t pre-chop it or anything so it stays moist and then I just pull what I need out, chop – chop and dinner’s pretty much done!
This also works great if you wanted to do a really quick stir fry for dinner {you can even shred the chicken with your fingers if you don’t want to chop anything!}. And if you want something a little bit more festive than a normal baked chicken, you could try my Lemon Lime Chicken that’s going to be in my next book {umm, by the way – that chicken is AMAZING. Toriee, the Queen of being a picky eater, loves it and requests it now}.
And the really fun part? When we’re buried in a million feet of snow in a few months you can make this and pretend it’s Summer. So at some point in February, after I’m officially done with snow + cold weather, I’m going to bring this back and be all “you guys, it’s Summer … in my apartment“.
And! I used cilantro in this to make it extra awesome — if you are 100% anti-cilantro, like my Dad, you can skip it and put in another herb you like with mangos – such as parsley or basil! And yes — the mango is frozen, and pre-chopped in this recipe to keep costs down and to avoid the whole “it might not be ripe or it’s over ripe and now I’ve wasted money” crisis that happens to us all! Plus, the frozen, chopped mango helps make this really quick to make!
Now off you go to make this this weekend! And it’s awesome if served with some white rice or cauliflower rice!

Mango Lime Chicken

Ingredients
- fat of choice
I used KerryGold Butter - 1 medium onion, medium dice
- 2 large chicken breast, diced into bite sized pieces
mine was pre-cooked, but if yours isn’t, still dice it and then cook it! - 1/4 – 1/2 a {16oz} bag of mango chunks
how much you add depends on how much you like mango /sweeter dishes - juice of 2 limes
- 1/2 cup raisins
- 1 tsp. cumin
- salt + pepper, to taste
- handful cilantro, chopped
Instructions
- Get a large skillet heating on medium heat with your favorite fat
- Add in your onions and let the get all soft, pretty and yummy.
- Add in your chicken and let it either heat up or cook
it just depends on if you’re using pre-cooked chicken like I did! - When your chicken is either heated or cooked through, add in your Mangos, lime juice, cumin, raisins, another tablespoon or so of your fat of choice, salt + pepper and cilantro.
- Mix it all well and let everything become friends in the pan and have the mango heat through. Taste test and adjust seasoning as needed!
- Serve and enjoy 🙂
