Here’s the skinny: I’ve been paleo for so long I forget what a gluten/wheat-based biscuit tastes like. Not even kidding you right now — all I know is they were yummy and I was totally smitten with them. Therefore — if you’re new to paleo and still remember what one of those little suckers taste like, don’t hate me if this isn’t an exact replica! So to sum up – these are yummy, and you need to make them!
And oh my bacon, my newest baby is out in less than 2 Months!!!! Can we all sqweeee for a moment <insert moment>, and we’re back! Ok so go pre-order her here ASAP if you want a copy {which you do, we all know you do!}
So let’s talk for a moment about why you need a “biscuit”.
1.) They’re delicious
2.) Sometimes you need to make a quick, cute sandwich for a date night or because you’re just #hangary
3.) Because tomato sauce, chili, and gravy demand some kind of homage be paid to them with something this delicious
4.) Butter
5.) Leftovers need some kind of vessel!
6.) Butter + Butter
mmmk I love this list. Especially the butter — because it’s true, butter needs a biscuit.
AND this biscuit recipe is going into the Free Thanksgiving E-book I’m working on! Which you’re going to LOVE! But like with every recipe I’m mentioning for it – make these ahead of time so you can perfect and tweak them as need be!
Don’t be afraid to make these any size you want either! I just did big ‘ol spoonful and dropped it on my parchment paper {hence, drop biscuit ha!}

Paleo Drop Biscuits
Prep Time: 10 mins
Cook Time: 15 mins
Total Time: 25 mins
Yield: 12-14
Ingredients
- 4 Eggs
- 1 cup almond flour
- 1/4 cup coconut flour
- 1 TBSP. Water
- 1 TBSP. Apple Cider Vinegar
- 3 TBSP. Melted coconut oil OR butter
I used KerryGold Butter, unsalted - 1 tsp. – 1 TBSP. Melted, raw honey
How much just depends on how sweet you want them! Mr. POAB prefers them with a full Tablespoon! - 1/2 tsp. each of your favorite dried herbs
{I used Rosemary and Basil} - Pinch of Salt
Instructions
- PreHeat your oven to 375{F}
- Crack your eggs into a bowl and beat them lightly.
- Add in the rest of your ingredients, and mix everything well. Don’t be afraid to mix and match your dried herbs/flavorings for this!
- Line a baking sheet with parchment paper and drop a medium sized spoon full of the mixture onto the pan per each biscuit!
If you don’t have parchment paper, line your pan with aluminum foil and grease it liberally as the the coconut flour will cause it to stick a little! - Bake for 15-20 minutes, until they’re lightly golden brown and smell yummy!
- Try to let them cool and enjoy!

Ahhh I need to stop looking at these gorgeous Paleo deserts. Looks absolutely yummy! Can’t wait to give it a go. I sometimes make these using flaked almonds for a bit more crunch, have you ever tried that? You have to mould them into biscuits when they’re fresh out the oven and then leave them to cool into nice cookies.
i love the way these look – Have you tried freezing them and, if so, how did they do thawed out and reheated?
Any alternatives to the coconut flour? Or a way to mask the flavor of the coconut flour?
Heyy Erik! I don’t know of any alternative to it because it’s so unique with how much it absorbs, etc. But you could literally add any flavoring in to it — roasted garlic if you like that would be a great way to mask the flavor. But to be honest it doesn’t taste a ton like coconut flour with the honey and the herbs it 🙂

Great recipe. I used almond *meal* and so had to add 1/4 c flour
I thought this needed baking soda or something mine did not rise they were flat like cookies and the batter was very runny.
I bake these in a regular basis..my hubby loves em!! And I often add raisins and cinnamon.
