Wow can we talk about productive today? The puggle + I were both awake enough to go for a walk before 8am this morning! Normally one of the two of us just wants to cuddle on the couch and fall back to sleep – but not today! Today we were up, we walked, we drank coffee {ok — I drank coffee} and we binged watched Criminal Minds on Netflix again … and we had some eggs and bacon {ok, I had eggs + bacon, she had some bacon}!
And now hours later, according to Mr. POAB I’m super multi-tasking — watching football {go Patriots!}, watching Criminal Minds {still}, and blogging! I feel like some kind of award should be given for this level of paying attention to multiple things at once, but I’ll settle for someone bringing me another cup of coffee or a batch of Maple Bacon Chocolate Chip Cookies {or both! Both totally works for me!}.
Which leads me to today’s topic… let me introduce you to my new best friend: Sweet Potato Carrot Mash.
This has to be our {as in mine + Mr. POAB’s} new favorite side dish. I like it because it’s cheap and it’s really easy. It’s also one of those sides dishes that waits for you. You can let it boil low and slow on the stove and to some extent forget about it without worrying that it’ll burn or you know cause billowing smoke to come out of your oven. Mr POAB likes it because it’s light and airy. He doesn’t like mashed sweet potato 98.483% of the time because it’s heavy. So by adding in the carrots you’ve gone from heavy to super light and fluffy!
Which in so many ways makes this the perfect Thanksgiving Side Dish! I also like to think that this can be eaten as is without a holiday. I mean toss some chicken or sausage and leftover veggies in this and you’ve got a really fun lunch or wicked quick dinner!
And can we talk about the color of this! I love how vibrant and full of life it is. Then you taste it and you’re like “woah, flavor and now I need another spoonful”. Next thing you know you’ve possibly eaten an entire batch of this without blinking an eye! Ok. Maybe that’s just me, but you get the point! It’s addictive and yummy! And I cooked the onion and garlic on the stove in lots of butter as part of the mash, because we all know things in butter / some kind of fat are just a million times yummier than without — but if you have roasted garlic add it in instead! I think this and the Drop Biscuits would both taste amazing with roasted garlic! And then the rest of the roasted garlic you can just slather onto something. Because come on, it’s roasted garlic!
Speaking of the onion + garlic, you can make that a few days in advance store it in the fridge and then add it in when you need it. You can also just make this side dish a day or two in advance if that works better for you! And don’t forget as always, add in your own favorite flavorings, herbs, fat, etc. Have fun with this!!!!

Sweet Potato Carrot Mash
Prep Time: 10 mins
Cook Time: 20 mins
Total Time: 30 mins
Yield: 2-3 people
Ingredients
- 5-6 Carrots, peeled and chopped
- 1 large sweet potato, washed and chopped
- Favorite fat {lots of it!}
- 1 small onion, finely diced
- 2 cloves of garlic
- 1 tsp. dried dill {or your favorite dried herb}
- Salt + pepper
Instructions
- Peel your carrots and chop them into chunks and toss them into a large pot. — Remember the smaller you cut them the quicker they cook!
- Rinse your sweet potato and then cut into cubes and toss it into the pot with the carrots.
- Cover it all with water and let it sit bowl on the stove until everything is fork tender.
- While that’s boiling away, heat a small pan with a good heaping spoonful of fat on medium low. Toss in your onion and garlic and let it start to cook. When it’s soften and cooked through turn it off and let it just cool down.
- When your carrot + sweet potato are cooked, drain and place back in pot. Mash it up with some fat, add in your onions + garlic, dill and salt + pepper. Mix it up, taste test and adjust as needed!
- Serve and enjoy!
