Peel your carrots and chop them into chunks and toss them into a large pot. — Remember the smaller you cut them the quicker they cook!
Rinse your sweet potato and then cut into cubes and toss it into the pot with the carrots.
Cover it all with water and let it sit bowl on the stove until everything is fork tender.
While that’s boiling away, heat a small pan with a good heaping spoonful of fat on medium low. Toss in your onion and garlic and let it start to cook. When it’s soften and cooked through turn it off and let it just cool down.
When your carrot + sweet potato are cooked, drain and place back in pot. Mash it up with some fat, add in your onions + garlic, dill and salt + pepper. Mix it up, taste test and adjust as needed!
