But before I dive into the deliciousness that is this recipe — I have some slightly sad news. And now onto bigger and better news! Let’s talk about this recipe: It’s amazing, easy and cheap! What more can you ask for in a recipe right? Exactly! This is what I like to think of as one of my meal planning go-to recipes. It’s perfect to either plan in advance or it makes a stellar “I forgot to plan tonight’s dinner” recipe. Why? Because 91.248% of the time you’re going to have all the ingredients in your freezer or fridge and you can whip this up in less than a half hour and wow anyone without breaking the bank or a sweat. So let’s label this your new favorite clutch recipe.
Flavor wise? I love the balance of broccoli and chicken and lemon — it gives it an upscale look and feeling all while being a comforting meal at the same time. Talk about an epic win! And – I think this would be a great meal to make just for yourself one night or to serve as a meal to friends + family! My favorite part is that you can serve this with literally anything.
It works well with:
• Rice
• Mashed Sweet Potato
• Zucchini Noodles
• Cauliflower Rice
• Spaghetti Squash
• And especially …. On it’s own
Not to mention this makes for some stellar leftovers! I’m not even kidding — just eating it for lunch the next day rocks. But it’s also ridiculously good in scrambled eggs or an omelet! Which is why this is just another reason why this is one of my favorite recipes from the book!
Here’s a Pro Tip for the recipe: Keep some steam fresh broccoli bags stored in the freezer – that way if you already have some precooked leftover chicken you can literally make this recipe in under 15 minutes by just heating the chicken and broccoli and quickly cooking the onion + mushroom and combing it all!

Sneak Peek Recipe from Paleo Meal Planning on a Budget!
Ingredients
- fat of choice
- 1 medium onion, medium-finely diced
- 1⁄2 (12-oz.) pkg. mushrooms, cleaned, de-stemmed, and sliced
- 11⁄2–2 lbs. chicken, chopped into bite-sized pieces 1 tsp. cumin
- 1–2 lemons
- 12 oz. cooked broccoli
- 1 tsp. dried basil
- 1 tsp. dried oregano salt and pepper
Instructions
- Heat a large skillet with your fat of choice over medium heat.
- Add your onion and mushrooms and let them start to soften.
- While they are cooking, chop up your chicken and add it to the skillet. Mix well and allow it to cook.
- When it’s almost cooked through, add in your cumin, juice of half a lemon, and your broccoli. Mix.
- Add your basil, oregano, and juice of another half a lemon to the pan. Add a little more fat, salt, and pepper to the pan when your chicken is cooked. Mix it once again.
- Taste test and adjust seasoning as needed. Depend- ing on how juicy your lemon is, you might need another half or whole lemon’s worth of juice.
- Enjoy!
