Tacos, Tacos, Tacos. I cannot get enough of Tacos – and no, not the cheap fast food version of tacos. I’m talking my super hearty, yummy give me another please Tacos! And oh boy — are these those kind of Tacos! And in case you didn’t guess yet — this is totally another sneak peek recipe from my new book Paleo Meal Planning on a Budget!

Ok enough on the housekeeping side of things, let’s talk Tacos! Somewhere I know I’ve admitted a that I used to hate Tacos as a kid. We would have “taco” night and it would included ground meat, different toppings, wraps, and the crunch hard taco shell thingies. And for some reason that whollleeeee dinner made my skin crawl just a little. I ended up only eating the ground meat + cheese + onions. Fast forward to going paleo and I decided to give it all a try again and wouldn’t you know — it’s actually really good!
Here’s the secret – it’s all got to be from scratch. Mixing your own spices, adjusting it as needed and putting your favorite stuff in is what really makes it go from eh…that’s ok to oh gosh I’m going to dive in face first.
To be honest the hardest part of developing this recipe for the book was not eating everything before taking pictures / fully letting it cook. No big deal, I mean that’s normal right? And knowing that I’d be blogging this recipe this week I of course made sure all the makings of Tacos were in the house! Because now I want tacos, and cupcakes – but that’s a totally different story!
So not only are Tacos amazing they’re also a meal planning all star! Why? Here it goes:
• You can use toppings on them so everyone is going to like it.
• You can eat them in a lettuce wrap, on a salad or just the meat in a bowl with toppings – making it affordable for any age + taste preference.
• Leftovers are AMAZING! Toss it in scrambled eggs, on top of a salad, with some leftover stir fry veggies or as is and you’re going to be a really happy camper at lunch time.
• They can be served as is or with side dishes. It’s hearty enough that if you’re eating for one or two and you want to be in and out quickly you can just eat this straight up without a side dish and still have a happy tummy!
• Making extra and storing = a fun, different base for chili or a meat sauce! Just save the leftovers and later on in the week make chili or sauce + zucchini noodles or green beans and half the work is done! Not to mention if you have extra of this I think it’d be great to add into my Oversized Meatballs | Sauce + Green Beans recipe!
See! He’s a gem! you need to make this ASAP, as in tonight. And then call me and we’ll have a Taco party. Literally — let’s have a Taco Party!
And as a P.S. – the mayo shown in the picture for a topping was a cumin mayo – I just made a regular batch of paleo mayo, used lemon juice, cumin, salt + pepper, basil + garlic powder. Mixed it together and it took it up a notch without really any extra work or added expense! And then served along side of it was my roasted sweet potatoes! Super easy and it worked well with both the Tacos and as something to dip into the mayo!

Ingredients
- fat of choice
- 1 medium onion, diced medium-finely
- 1⁄2 {12-oz.} pkg. mushrooms, cleaned, de-stemmed, and sliced
- 1 lb. ground beef
- 2 Tbsp. chili powder
- 1 Tbsp. cumin
- 2 tsp. dried basil
- 1 tsp. garlic powder
- 2 tsp. dried oregano
- 2 Tbsp. apple cider vinegar
- 1 {14-oz.} can diced tomatoes, drained
- salt and pepper
Instructions
- In a skillet, heat your favorite fat on medium-high heat.
- Add in your onion and mushrooms and let them start to cook.
- After a few minutes, once the onions become soft, add your ground beef and mix.
- When your beef is about half cooked, add in all of your spices and herbs, and then mix well. You want the herbs and spices to warm up just a little before you add the rest of the ingredients.
- Add your apple cider vinegar, tomatoes, salt, and pepper. Mix well and allow everything to finish cooking.
- Because these are tacos, the longer the mixture sits, the better. So you can either serve right when the beef is done, or you can let it sit on the stove on low, covered for a few hours.
- Serve these with lettuce wraps, as is, or over your favorite “noodle” for something different. Don’t forget to include your favorite toppings if desired {avocados, nuts, homemade mayo, shredded raw cheese, and so on}.

What Lettuce do you use for these? I always get the wrong type.s.
Heyy Alyssa!! I use Romaine Lettuce {I just get from the grocery store – it’s normally in a 3 pack and for me it’s always near the salad blends and packaged spinach!}! You can also use boston bib lettuce for these if that’s on sale!!
