  • fat of choice
  • 1 medium onion, diced medium-finely
  • 1⁄2 {12-oz.} pkg. mushrooms, cleaned, de-stemmed, and sliced
  • 1 lb. ground beef
2 Tbsp. chili powder
1 Tbsp. cumin
2 tsp. dried basil
1 tsp. garlic powder
  • 2 tsp. dried oregano
  • 2 Tbsp. apple cider vinegar
  • 1 {14-oz.} can diced tomatoes, drained
salt and pepper


  1. In a skillet, heat your favorite fat on medium-high heat.
  2. Add in your onion and mushrooms and let them start to cook.
  3. After a few minutes, once the onions become soft, add your ground beef and mix.
  4. When your beef is about half cooked, add in all of your spices and herbs, and then mix well. You want the herbs and spices to warm up just a little before you add the rest of the ingredients.
  5. Add your apple cider vinegar, tomatoes, salt, and pepper. Mix well and allow everything to finish cooking.
  6. Because these are tacos, the longer the mixture sits, the better. So you can either serve right when the beef is done, or you can let it sit on the stove on low, covered for a few hours.
  7. Serve these with lettuce wraps, as is, or over your favorite “noodle” for something different. Don’t forget to include your favorite toppings if desired {avocados, nuts, homemade mayo, shredded raw cheese, and so on}.
