It’s almost Christmas – which means Santa is going to need to cookies. And Santa needs good cookies – to keep him going all night while wrapping presents …. I mean delivering them! So I give you the Coconut Raisin Cookie! This is one of those cookies I came up with when we were both hankering for one, but didn’t want the typical Chocolate Chip {gasp, I know!}.

And let’s go back to cookies! Because – Cookies! I love cookies, if you can’t tell. They’re fun, easy to eat and make you feel all extra awesome. The best part? These cookies are almost breakfast-y. If you make them a little thicker and let them stay soft and chewy they’re almost a scone! Which means it makes it fine to eat for breakfast, or lunch, or dinner, or any time in between!
These have a crunchy outside edge and are soft and moist on the inside which makes it the best cookie ever. And they’re full of this vanilla coconut maple syrup awesomeness that you can’t describe because it’s so good you have to try it for yourself!
So what are you waiting for? Make yourself a batch tonight then in another few days make a batch for the Holidays and you know maybe another batch right after — because we both know after putting on a feast, hanging out with friends + family and wrapping 2.5 million gifts you’re going to deserve a batch of these just for yourself!

Coconut Raisin Cookies
Prep Time: 10 mins
Cook Time: 10 mins
Total Time: 20 mins
Yield: 11 cookies
Ingredients
- 2 eggs
- 1 cup almond flour
- 2 Tbsp. maple syrup
- 1 Tbsp. vanilla extract
- 3 Tbsp. melted butter or coconut oil
- 1/2 cup unsweetened, finely shredded coconut
- 1/2 cup raisins {or favorite dried fruit}
- pinch of salt
Instructions
- Preheat your oven to 375{F}
- In a large mixing bowl, crack your eggs and beat them lightly. Then add in the rest of your ingredients and mix well.
- Line a baking sheet with either parchment paper or aluminum foil – optional, but it makes clean up a breeze!
- Then using a small spoon scoop your dough onto a cookie sheet.
- Wet your fingers a little with some water and pat the cookies out so they’re thinner!
- Bake for 10-14 minutes, or until golden brown on the edges.
- Try to let them cool down and enjoy!
