I’ve always had a love/hate relationship with appetizers. I love how yummy they are but I hate how I always feel like I have to buy special ingredients for them that I’ll only use once and the rest gets forgotten on a shelf or the back of the fridge.
For instance prosciutto generally goes with fig or something like that. I normally don’t eat figs – heck I don’t think I’ve ever purchased just a container of figs. So why would I go through the hassle and expense of buying one special for an appetizer? Exactly, I wouldn’t! I love when any food whether it’s an appetizer or just a regular ol’ dinner has ingredients that can serve a variety of purposes or stretch to a few meals – which was the entire inspiration behind this appetizer!
This hit all of my “musts” and is also highly addictive and delicious. It’s light and airy so you’re not going to get stuffed before dinner – but not so light that you feel like you didn’t eat anything. It’s got a great balance of flavors and is easily customizable {see below} depending on your budget and household allergies!
If you have any leftovers these ingredients are fantastic on their own as is, on a salad, sandwich, stir fry, or even with eggs. This also scales beautifully which was another “must” on my list. You can make just enough for yourself or make it for a huge party. Either way it’ll work and you’ll be a very happy camper!
If you don’t have access to prosciutto or it’s too expensive where you are that’s totally fine! Don’t use it! Use a thinly sliced ham or really any thinly sliced deli meat. You could even use bacon! You can also easily swap the goat cheese out for your favorite cheese or whatever you’ve been using in place of a soft cheese. We personally used goat cheese because neither of us can handle cow’s milk dairy but are fine with goat cheese! Just use what you have and what works for you.
Some prepping tips if you’re serving this for a party or get together:
– You can pre-cut the cucumber and spring onion the night before and store in separate containers.
– You can crumble the goat cheese and store in a container – that way if you have extra it’s good until needed again!
Oh! And! The prosciutto for those that are curious: It’s made by Applegate, and is totally clean {literally just pork and salt} and for a 4 ounce pack was only $2.99, regular price. And I used less than three full slices for the amount shown in the photos + the extra that was “sampled” {It couldn’t be helped! Quality control and all that B.S. 😉 } during the making of process!

Wicked Easy Prosciutto, Goat Cheese, Cucumber Appetizer
Description
These are the easiest little snack/appetizer that scales really well to fit just one person or a crowd! I’m not going to give exact measurements just use what you need and what fits your tastes buds!
Ingredients
- Cucumber, sliced thinly
- Goat Cheese {I used roughly a 1/4 – 1/2 tsp per cucumber slice}
- Spring Onion {finely chopped, I ended up using 1 small one for the amount in the photos}
- Prosciutto
- Dried Basil {optional}
Instructions
- Cut up your cumber into thin-ish slices and lay them out on your cutting board. I normally build 3-4 of these at a time and then place on my serving platter.
- Add a small dollop of goat cheese {somewhere between 1/4 teaspoon and a 1/2 teaspoon depending on your preference}.
- Add a few tiny pieces of spring onion and a small sprinkle of dried basil {you can also use fresh or skip the basil all together}.
- Top with as much or as little prosciutto as you’d like! For the amount shown in the photos and the “extra ones” not photographed {heyy, we needed to test them… frequently} I used less than three slices!
- Place on a plate and serve!
