It’s been cold and snowing here for what feels like forever — and currently? There’s a blizzard outside. Just looking outside makes me cold, partially cranky and well, cold! All of this translates to I need soup for dinner to achieve maximum comfort – but before that, I need a big dose of Summer! How does one achieve this in the midst of a blizzard?
Why salad of course! I love, love, love salad! It’s easy to make, it’s always pretty and can easily be mixed up to fit whatever is hanging around in the fridge! But the this salad is a little extra special because it feels {and looks} like Summer or Spring in a bowl!
The best part is that everything in this salad can be used for other things or just more salad so you don’t have to buy special! For instance I’m making Ginger Chicken again this week so I have mushrooms on hand which is where the mushroom came from. I’m also working on a cucumber side dish so I had cucumber and we’ve been keeping prosciutto around because it’s cheaper than most other deli meats currently. For pricing reference: I’m using Applegate Prosciutto, it currently costs me about $2.99/package, regular price and I can get two lunches per a package for two people! Makes it pretty inexpensive but it feels luxurious in its own way! Which I always love when something is relatively inexpensive but feels special – makes being on a budget that much easier!
And remember, as with all of my stuff if you don’t have an ingredient don’t freak out or buy special! Just use what you have!
As for the dressing — I made my own! I’ll list ingredients + proportions in the recipe box! If you don’t want to make a dressing just use some olive oil and vinegar or whatever you use normally for salad! You can also scale this and make extra so you have some for a few days! It’s great on more salads or to add to a stir fry! Also, best way to make a dressing is to use a container with a lid so you can shake it up. Something like a mason jar with a lid or some kind of tupperware container with a lid are great! You can also just whisk it all together, but I like the container with lid so I can store it easily and remix it up when needed!

Easy + Quick Prosciutto & Veggie Salad

Easy + Quick Salad that’s perfect for lunch!
Ingredients
Dressing
- 2 Tablespoons Extra Virgin Olive Oil
- 1 Tablespoon Apple Cider Vinegar {you could also use balsamic, red wine vinegar, etc!}
- 1/2 tsp mustard
- 1/2 tsp dried basil {or your favorite dried herb}
- salt + pepper to taste
Salad
- Lettuce mix of choice
- Prosciutto, chopped
- Cucumber, chopped
- Mushrooms, cleaned + chopped
- Goat Milk Brie, cut into bite sized pieces
- Almonds, chopped
Instructions
Dressing
- Add your ingredients into a container {see above blog post} and shake it all up! Use immediately or store in the fridge until needed!
Salad
- Lettuce goes into the bowl first then top build your beautiful Summer looking salad!
- Top with dressing and enjoy!
