Mango Lime Chicken

Ingredients

  • fat of choice
    I used KerryGold Butter
  • 1 medium onion, medium dice
  • 2 large chicken breast, diced into bite sized pieces
    mine was pre-cooked, but if yours isn’t, still dice it and then cook it!
  • 1/4 – 1/2 a {16oz} bag of mango chunks
    how much you add depends on how much you like mango /sweeter dishes
  • juice of 2 limes
  • 1/2 cup raisins
  • 1 tsp. cumin
  • salt + pepper, to taste
  • handful cilantro, chopped

Instructions

  1. Get a large skillet heating on medium heat with your favorite fat
  2. Add in your onions and let the get all soft, pretty and yummy.
  3. Add in your chicken and let it either heat up or cook
    it just depends on if you’re using pre-cooked chicken like I did!
  4. When your chicken is either heated or cooked through, add in your Mangos, lime juice, cumin, raisins, another tablespoon or so of your fat of choice, salt + pepper and cilantro.
  5. Mix it all well and let everything become friends in the pan and have the mango heat through. Taste test and adjust seasoning as needed!
  6. Serve and enjoy 🙂
