Coconut Raisin Cookies

  • 2 eggs
  • 1 cup almond flour
  • 2 Tbsp. maple syrup
  • 1 Tbsp. vanilla extract
  • 3 Tbsp. melted butter or coconut oil
  • 1/2 cup unsweetened, finely shredded coconut
  • 1/2 cup raisins {or favorite dried fruit}
  • pinch of salt


  1. Preheat your oven to 375{F}
  2. In a large mixing bowl, crack your eggs and beat them lightly. Then add in the rest of your ingredients and mix well.
  3. Line a baking sheet with either parchment paper or aluminum foil – optional, but it makes clean up a breeze!
  4. Then using a small spoon scoop your dough onto a cookie sheet.
  5. Wet your fingers a little with some water and pat the cookies out so they’re thinner!
  6. Bake for 10-14 minutes, or until golden brown on the edges.
  7. Try to let them cool down and enjoy!
