Wicked Easy Prosciutto, Goat Cheese, Cucumber Appetizer

These are the easiest little snack/appetizer that scales really well to fit just one person or a crowd! I’m not going to give exact measurements  just use what you need and what fits your tastes buds!


  • Cucumber, sliced thinly
  • Goat Cheese {I used roughly a 1/4 – 1/2 tsp per cucumber slice}
  • Spring Onion {finely chopped, I ended up using 1 small one for the amount in the photos}
  • Prosciutto
  • Dried Basil {optional}


  1. Cut up your cumber into thin-ish slices and lay them out on your cutting board. I normally build 3-4 of these at a time and then place on my serving platter.
  2. Add a small dollop of goat cheese {somewhere between 1/4 teaspoon and a 1/2 teaspoon depending on your preference}.
  3. Add a few tiny pieces of spring onion and a small sprinkle of dried basil {you can also use fresh or skip the basil all together}.
  4. Top with as much or as little prosciutto as you’d like! For the amount shown in the photos and the “extra ones” not photographed {heyy, we needed to test them… frequently} I used less than three slices!
  5. Place on a plate and serve!
