Well around here we’ve been doing the classics paleo style … and they’re turning out a million times better than pre-paleo. However… Primal Puggle is still demanding bacon… at every meal {I wish I was joking}. And this {see picture} is a prime example of what happens after I give into those demands {she runs around and gets in your face like a little goof ball until you give in… hence the passed out puggle…}
Ok Back to my blog post {you know you needed a primal puggle fix!} This classic is based on an everyday pasta & sauce dinner. I’ve done a few different versions.. This is so far the only one I’m 100% happy with! I roasted green beans and tossed them into a super yummy meaty tomato sauce.
Ingredients:
• 1 lb {ish} of Green Beans
• 1 lb ground beef {or pork or turkey.. your pick!}
• 1 medium onion, diced
• 2-4 sausages, chopped into bite size pieces { I used the reg. size frozen one}
• 2 cans diced tomatoes {The average sized one…what is that 14oz or something?}
• 2 medium sized carrots, diced
• Olive Oil + Ghee
• Salt + Pepper
• Red Pepper Flakes {to taste}
• Seasonings of choice { I used dried basil, rosemary, and Italian Seasoning}
• Lemon
How To:
•Pre-heat your oven to 350 degrees. Snap off the ends of green beans if they weren’t done for you already {Do it yourself.. its cheaper!}. Give them a rinse, and pat them dry with a paper towel. Put your green beans on a baking sheet drizzle with olive oil, salt and pepper. Pop them in the oven for like 15-20 minutes.. Keep an eye on them!
• In the meantime get your onions sweating in a pan with some ghee, add in your carrots. After those have been becoming friends for a few minutes, add in your ground beef and sausages and let them cook.
• Once your beef and sausages are all cooked, add in your spices, red pepper flakes and stir it around. Then add in your cans of tomatoes. But wait! Use one can as is, and then drain off most of the liquid from the other can.. I don’t like a “saucy” sauce, so that’s why I did it like that. It’s up to you though if you want more sauce to it.. Also if you want it thicker this is when I’d add in Tomato paste { like a tbsp or so}.
• Your string beans should be all done by now. They taste so good as is, but in this instance add them into your sauce, stir and give it a spritz of fresh lemon juice {or you could use apple cider vinegar}.
•Boom its done..Enjoy!
**** If you are beyond crunched for time, use a jar of sauce… I won’t cry or pout or anything I swear…. It’ll make your life easier and It’ll go quicker for you. To make it even quicker to make use frozen green beans along with a jar of sauce. Add some meat and onions in a pan, cook them together until your meat is done, add sauce and green beans and let it go for like 20 minutes {or less}, spritz with some lemon and you should be golden.. and it’ll take you all of 10 minutes to put together!
Or just chop up a cup or two of fresh tomato…knowing that there is a lot of sodium in most canned goods, this might be a necesary step for some who get too much sodium in other areas.
ps liking the frugal tips! Ann
You could totally do that too! Sometimes I’ll do that if I have them on hand. But more times than not they’re pretty pricey for me so I stick to the canned ones!
Glad your liking the tips!!!!
Made this for dinner tonight–quick and tasty! Used diced tomatoes with chiles because that’s what I had in the pantry. Turned out well.
SO glad you liked it!!
How was it with the chiles? That sounds yummy 🙂
Primal Puggle looks like a Vizsla!
I have one too and I hope mine will also grow into a calm-once-in-a-while mode because right now I am getting plenty of walking excercise 😉
Haha Richard, Primal Puggle is two and we only have moments of “calm-mode” the rest of the time she’s her hyper self.. it has totally gotten better though from when she was a puppy… Does your dog sniff everything when they go for a walk? I swear it takes me ten minutes some times to go 3 feet lol!!
Yes, that sounds familiar, but that’s because of my English Cocker Spaniel, he’s very sensitive to the scent of some bitches around here that are in heat. Mac, my Vizsla I walk him mostly off leash, he will be two years old in may, he’s ADHD all day until the dark sets in and then he drops down and sleeps till next morning. After that the party starts over again!!!!
Vizsla-power 🙂
This was so easy and delicious! My grandmother used to make something similar so I tweaked my recipe a tad to line up with hers more. I used fire roasted diced tomatoes for a little added depth of flavor, and added in 1TBS of tomato paste. Didn’t add in the carrots or sausage either. I want to keep going into the fridge and grabbing more! Thank you for reminding me about this family tradition 🙂
how is this recipe “Paleo” I thought we could not have green beans nor sausage??? I suppose skipping the sausage and adding asparagus instead of beans would do the trick.
Heyy Kris!
Sausage is totally fine when paleo! As long as you either remove the casing or it’s natural casing {like lamb} and you make sure the ingredients are paleo friendly {so no sugar, soy, etc}.
And green beans are also fine! They’re more pod than pea making it fine! But if your body can’t handle green beans though you could always try spaghetti squash or zucchini noodles!
