Well I’ve finally hit the point in my life where I’m so busy it feels like I don’t have time to cook most days. I mean you know me.. you know I love to cook, cooking is one of my great loves — And I’m finding myself having less and less time to cook the big meals I love to make like a Paleo Shepard’s pie for example {rumors are true, I haven’t made one ALL winter}. I mean that sucker has what three big steps to it? You got to mash the sweet potato {or Butternut Squash}, cook the beef mixture AND then bake it! I mean holy cow. I’m lucky I’ve got time to throw a stir fry together some nights. Never mind do all that…. and let’s not get started on the dishes. I think Mr. Not So Paleo developed a twitch after seeing the state of the kitchen a few nights ago.
So why am I telling you all this? Because I get it now — I get it when you guys email me saying you need quick + easy recipes because they don’t have the time. I get it now when people are all “cooking healthy is easy but it can be a bit more time consuming” and then roll their eyes when people try to tell them differently. Yes…. that’s right I’m with you all, it is more time consuming in some ways … why? Because I can’t just throw a pizza in the oven and call it a day. I can’t just heat a <insert gross frozen meal here> and eat it. I even get it when people give me the whole “you must be joking — when the heck am I going to have time to do “prep day” talk — it’s not easy, but we all know it is oh-so-worth it!
So from now on — I’m going to try and feature / post only recipes that are beyond fast, easy, healthy + yummy. Of course I’ll still post the big long recipes occasionally, but they’ll be a little far and few between.
To all of you Mom + Dads, students who work and go to school full time, my friends who work way to much — I completely and totally get it, and I admire the crap outta you for doing it all and still making time to be healthy.
So don’t stop, because I promise to help you out as much as I can!

We ALL love quick and healthy, but the more involved meals are important, too. Sometimes we can involve our kids in the prep, depending on their ages, and more time in the kitchen suddenly becomes a wonderful opportunity to open channels of communication with our kids, an opportunity to pass along good attitudes toward food and family keeping, and a chance to share the pride of accomplishment. No, we don’t always have time for the preparation, but we certainly do like the option. Keep updating your “recipe” tab so we can pick and choose for ourselves when time permits! Afterall, sometimes we just need a reminder to slow the heck down and enjoy a good meal. Thank you for your efforts on our behalf!
Hah, I’ve been there. I never understood why my friend Ryan had such a difficult time cooking for himself while he was single, versus me who was feeding a household of 6. Now, I’m the one who’s single and I get it. Shopping for 1 is expensive and in some ways takes more mindfulness.
