It’s no secret that growing up I wasn’t the biggest fan of Pie. For some reason I didn’t like mix of pie crust and filling and half the time I hated the filling itself {I’m a weird one, I know!}. I only stuck around for dessert during the holidays for the coffee + ice cream and you know … the occasional cupcake someone would bring.
And then recently Mr. POAB and I have been talking all about Thanksgiving and our favorite foods revolving around it. {If you’ve been around for a while you might know this is my FAVORITE holiday. It’s an entire day dedicated to eating — how much better does it get than that? Answer — it doesn’t!} And of course pie came up and we started talking about our favorite parts of a pie. Mr. POAB admitted he was a huge fan of apple pie filling and if I could make just that, he’d be one very happy camper.
Of course that challenge was accepted and then owned because I came up with this little beauty!
But before I tell you all about why you need to make this tonight – let me tell you about a few fun things!

Okay, those are my new fun things — back to this Faux-Apple Pie!
This is nut free, egg free, dairy free and full of comforting flavors. Basically your house will smell amazing, you’re welcome! I’m also going to have a separate post soon for a crumb topping that can be combine with this {or another one of your favorite fruit – filled pies like peach, cherry, blueberry, etc} for extra yummies!
And yes — I’m using the word pie really loosely here but it kind of applies — and you know I like to break the rules 😉 !
Don’t forget to top this with your favorite things! You can do paleo ice cream, whip cream of some kind or coconut whip cream, nuts, coconut shavings, chocolate, etc! Or you can be like us cool kids and eat it as is!

Lazy Man Paleo Apple Pie
Prep Time: 10 mins
Cook Time: 30 mins
Total Time: 40 mins
Yield: 2-4
Category: Dessert
Ingredients
- 4-5 medium sized apples, rinsed + sliced
- 2 Tbsp. melted coconut oil or butter
- 1/2 a lemon’s worth of juice
- 1 tsp. cinnamon
- 1 tsp. vanilla extract
- 1/2 tsp. nutmeg
- pinch of salt
Instructions
- Pre-heat your oven to 375{F}
- Give your apples a rinse and then slice it up using your favorite method.
- Place your apple slices in the bowl along with your melted fat, lemon juice and spices, vanilla and pinch of salt.
- Give it all a really good mix and then put it all in a pie dish!
Or a baking dish, whatever you have handy will work! - Bake for 25-35 minutes until the apples are soft / fork tender.
- Let it cool for a few minutes and serve!
Serving tip: If you’re doing this on a Holiday where you’re already stuffed to the brim and just need a taste of dessert, this should serve 2-4 people. If however you’re making this at home for you and some friends without the massive meal before hand, you might need to double the recipe or serve it with some kind of topping 🙂

Heyy!! I like to leave the skin on to give it some texture – but you can also make it with skin off the apples, totally personal preference!
