Oh granola – how I’ve never been a fan of you. That’s right – I never liked granola. Even when I tried to eat “healthy” pre-paleo I was never a fan of the stuff. I used to have to eat smothered in other things {read: chocolate}. And then I went paleo and was all woohoo no granola for me! And this probably makes me officially a very weird and picky eater I know – but it’s totally a true story!
But then I went to the grocery store a few days ago and they had these beautiful strawberries on sale 2/$4! And let me tell you they’re totally perfectly ripe and just beautiful – I haven’t found a bad one in the bunch! So I got them home and was all “ohh chocolate covered strawberries” … fast forward three hours and I’m all “ohh way to lazy for that” so then I mixed a few things here and a few things there and boom – Strawberry Granola. And let me tell you – I can’t stop eating this stuff. It’s so good!
It’s totally the perfect blend of sweet, tangy and chocolatey! So it’s perfect for Valentines Day … ok it’s perfect for really any day if we’re being honest!
Now this isn’t “granola” like you and I used to know it. This is more that fun whimsical kind that makes you all happy and could cause happy dances throughout your house, office and possibly randomly on the sidewalk. My favorite part about this is that it has pretty much way to many uses!
Want to here a few?
• You can eat it as is for breakfast or dessert.
• You can use it to top pancakes!
• Use it as a fun cake or cupcake topping.
• Serve it in with your favorite Paleo Cereal {need a recipe for one? Try the one from the Paleo Eats Cookbook!}
• You could add in some coconut milk and make it more of it’s own “cereal”!
No to mention this is the easiest thing in the world to make – I mean seriously, less than five minutes and it has four ingredients! And you can use any Paleo friendly chocolate + nut in it you want. You could even add in some shredded or shaved coconut, an extra kind of fruit {like banana or blueberries}.

Paleo Strawberry Granola
Prep Time: 5 mins
Total Time: 5 mins
Yield: 1-2 servings
Ingredients
- 6-7 washed, chopped strawberries
- 1-2 TBSP. dark chocolate
I used enjoy life chocolate chips - 1-2 TBSP. favorite chopped raw Nuts
I used the Trader Joe’s pre-chopped pecans - Spritz of lemon juice
Instructions
- Wash and chop your strawberries and add them into your bowl.
- Then add in your chocolate + nuts – use as much or as little as you’d like!
- Add a small spritz of lemon juice, mix it all up and either serve right away or store covered in the fridge until you’re ready for it!

Ok I am new to the paleo scene and I have been combing the web for recipes, blogs, friends anything that I can hold on to during my journey. I have been 4 days paleo (yay me!!) so I am trying to build up my pantry with the right ingredients and the right treats 🙂 I can’t live without. Plus I have 2 teenage girls and husband who are so supportive and super on board with the changes but I don’t want to bore them back to western eating. This looks yummy and I am going to bring it to our family Easter brunch next week. what do you think about adding honey? too much sugar?

Heyy Bianca!! You could try using raspberries, blueberries, blackberries or even something like a cut up orange could be fun! You can also use defrosted frozen strawberries 🙂
You need to soak the nuts and then dry and heat them
