It’s that stressful wonderful time of year where everyone, their Mom, their dog and possibly their neighbor either wants to see you, needs something or just needs to borrow a cup of almond flour. Which translates to you needing about 10 more hours in the day and to possibly level up your caffeine habit {you know, to maybe a level 20… that still might not be enough}. Fear not -I’ve got a list of my top 5 favorite recipes on the blog that’ll keep you out of the kitchen and in fighting shape for that to-do list you’re trying to tackle!
Fruit Smoothies
Now I know, it’s a Fruit Smoothie, it’s not a meal … technically. But these things are so filling and you can put all kinds of good stuff in them {like different protein powders, nut butters, fruit, different kinds of non-dairy or dairy milk, etc} that if you’re in a rush making one of these might just save your sanity! So next time you go grocery shopping snag a few of your favorite frozen berry mixes to have on hand and blend away { ok… never saying blend away again… that was a little weird}!
Heart Tomato Soup
It’s hearty, it’s a tomato soup. It can sit on the stove and not be babysat while you wrap presents, clean your house or do this really crazy thing called relaxing! Best part it’s super cheap to make and leftovers are the bomb dot com so you can have a few extra yummy meals tomorrow or the next day!
Chicken, Peppers + Artichokes
We all know that when the holidays hit most of us like things to feel all pretty and special and yummy. Enter this amazing little stir fry. It’s not hard to make and hardly takes anytime but at while eating it you feel like you just made yourself a $40.00 dinner. It’s also a great meal to have if you’re hosting a few friends or family members for some kind of holiday get to together!
Lemon, Chicken + Broccoli
This is the best of both worlds. You get your pretty meal, but it takes so little time and is comforting that you won’t even realized you cooked! And if you keep frozen broccoli on hand this dinner becomes even quicker to make – which means you might be able to once again revisit this mysterious “relaxing” thing… activity that I mentioned earlier.
Mug Cake
I know, I know it’s not a meal. But it’s cake … in a mug. It counts as a meal, sanity saver, time saver and oh yeah – it’s perfect for eating while you watch your favorite movie or TV show and relaxing! And if you’re looking for something new to watch you seriously need to check out Jessica Jones on Netflix!
So remember – make yummy, easy food + go put your feet up for a bit and relax! Maybe watch some Jessica Jones or DareDevil on Netflix!
xoxo
Liz-
Hey Liz, I’m brand new to Paleo, and this site is helping me a ton! Is there a place I can find the butter chicken recipe without buying the book?
HI Li,
I just bought your book “Paleo Meal Planning on a Budget” and I can’t wait to try the recipes. I was wondering why you do not list the nutitional values(i.e. Sodium, carb, sugar etc) for each recipe?
