It seems like every other day there’s some sorta crisis or family event or deadline to be met. Does anyone else ever feel that way?! Hence today’s blog about something that is beyond yummy and is good for on the go or crazy busy days!
Friends.. Meet the Egg….. Isn’t he cute… don’t you just want to go out and get yourself a dozen or two of em??
Eggs are the best quick, easy, & cheap o
n the go food you can do for yourself and your family. They’ve got what you need to keep up your energy when ever where ever you are {Throw in a little bit of jerky, almonds & you’ve got a survival kit for mostly anything}. On those nights when you come home, and you don’t want to cook for yourself {or for everyone in your family} this big paleo sized dinner… Seriously fry up a some sausage and do fried or scrambled eggs. {thats geared more towards my friends w/o kids because it’s easier to make 2 eggs for yourself then lets say a dozen fried eggs for you and the family…}
For my friends with kids {or without!}.. Meet the baked egg dish.. normally called a frittata { I refer to it as “you know that baked egg thing I made…” } If I’m lazy or have a million and one things to do a round the house on the weekend I just beat up 7 eggs, throw some kinda veggies in {normally whatever is on its last legs … or in the freezer from my never ending supply of frozen veggies!} some sausage {these are normally the frozen kind}, and spices/herbs. I rub down a cake pan with some olive oil, pour my mixture in.. bake it at 350 for like 20 minutes, or until it’s set… It’s awesome because you don’t have to baby sit it or anything, just mix it and bake it! The other thing with these is that you could get it all ready to go if you wanted, and pop it in the fridge {cover it with plastic wrap} and that way your other half or you {or gasp even the teenagers in the house} could just stick it in the oven when it’s time. Serve it with a side salad and you’ve got a really yummy dinner that was quick.
If you can afford it…. go for the Omega 3 enriched eggs, slightly better for you.. If you can go one step further and get them from a local farm.. Do.It. They’ll taste better, be fresher and just amazing! Also, if you can find someone who doesn’t give their chickens a “vegitarian” diet… then you must befriend them… never ever get out of touch and buy all your eggs from them…. you’ll thank me! {And watch Karen’s Rant about Chickens ASAP }
I’ll make these too and after it’s cooled down cut it up and stick it in the freezer individually wrapped. When I want one I’ll microwave it for what like 20 seconds. It’d be something good to take to work too because if you’re bringing food that needs an ice pack, these are frozen.. so they’re your ice pack.. double duty… ohh man that makes me happy.
The other thing to do with these bad boys is hard boil ’em. One day a week, boil up a bunch of them… and viola, instant on the go snack, or it’s half your breakfast ready to go. The kids can come home, grab an egg and some sliced meat and they’ve got a great after school snack. Sometimes the super simple things are the best. You could go one step further and make an egg salad while you’re at it. Have that with leftovers one night, or burgers. Simple simple simple and quick.
I’m must admit I enjoy every now and then the long process a meal will take.. but 9 times out of 10 if I’m hungry and working and busy…. I’m going to go grab three eggs, beat them up, pour in a heated pan… add some onion and tomato…and make an omelet.
