Yes.. Yes I went there, I made meatloaf.. I love meatloaf always have. My grandfather used to make it when I was a kid and it was a big big deal when he made it! There was always a huge bowl of mashed potatoes and corn and gravy ..
Yeah well.. that meal would probably make me sick on the couch for weeks now-a-days… so I’ve come up with a meatloaf that gives me comfort without the O-M-G I hate myself feeling after! If you know how to do the stick the hard boiled egg in the middle thing… then do it! I don’t / haven’t so I didn’t this time.. but its on my to-do list.
- 1.25 lbs {ish} of ground pork
- 1 small { a larger small} Onion diced finely
- ½ a medium carrot diced finely
- 1 tsp Dried Basil
- ½ tsp each Garlic Powder & Dried Oregano
- Salt + Pepper
- 1 egg
- Preheat your oven to 350 degrees {F}
- If you want to pre-cook your onions and carrots do that first { I don't pre-cook mine because I like my carrots to have a bit of a bite to them} and let them cool down before adding it in!
- Toss everything into a bowl and mix it really well {I use my hands}
- Grab some sort of pan that you can form a loaf with.. If you have an actual loaf pan then use that if you want.. I use my pyrex big baking dish and just form my loaf in it..
- When making your loaf.. try to make it as even as possible and make sure you're ends aren't too thin. You want your loaf to cook evenly.. I get pretty freaking OCD about making sure it's even I can't lie.
- Toss it in the oven for 30 minutes*
- When it comes out let it rest for 5-10 minutes before slicing in to it {I cover it with aluminum foil so it stays warm}
- Slice it up and enjoy!
*Cooking time will vary depending on how thick your meatloaf is.
Feel free to mix and match your ground meats! Lamb, pork, and beef will all work well in this!
