If you’re anything like me you’re probably getting ready to go to the grocery store at some point today for the 4th of July, because you know – being prepared for a holiday would be way to ordinary right? Exactly! So I’ve gathered up for you some of my favorite Summer – Inspired, your guests will love it, it’s easy to make, your wallet won’t hate you after recipes!
Cilantro Roasted Potatoes
I know these guys are new but look at them they scream “perfect side dish for any kind of grilled meat”! Heck – you could probably find a way to grill the potatoes and onions too and then just finish them up like the recipe says too! AND make extra because we all know you’ll need a killer breakfast the next morning and these with some eggs does the job so well you’ll think you landed in some 5 star restaurant!
Strawberry Granola
I know this recipe was originally a Valentine’s Day thing but it’s chocolate, fruit and nuts – translation: EASY dessert. And if you can’t find strawberries don’t panic – just pick your favorite berry or assortment of berries and boom 5 minute dessert! Honestly though, if you want to really make this extra, extra special whip up some whip cream or some coconut whip cream and add a spoonful ontop! Me? I’m eat this as is, right out of the mixing bowl while the fireworks go off!
Sweet Potato Carrot Mash
I know that this little beauty was a Thanksgiving Recipe BUT some of us like mashed potatoes and carrots and think it goes really really well with anything – which is why it made the list! It’s also really cheap and easy to make so if you’re having a large crowd you can feed a lot for not to much money! It’s also a great idea if you’re having a large party to make this the night before and the also make the Cilantro Roasted Potatoes so there’s something for everyone without all the extra work day-of!
End of Summer Salad
While it’s not the “End of Summer” all of the veggies I used in this are probably on sale right about now because of the holiday – so this would be a perfect side dish or early-lunch item to make! And I do highly suggest an early lunch if you’re doing a big dinner just so all band wagons stay intact the whole day! Me? Probably making this either to start the day with some eggs or if we eat the main meal early, later on in the night as a snack!
Steak + Watermelon Wraps
Of course I wouldn’t leave you hanging without a main dish on such a big day! This is actually what I’m eating on Saturday Night! It screams “4th of July” or “Summer Time”. Also, it’s easy to make and if you’ve got the grill out just grilled the steak up instead of pan frying it like I did! And if you haven’t tried that combination of steak, watermelon and balsamic vinegar you’ve got to ASAP because oh my bacon, it’s just that good!
Maple Bacon Chocolate Chip Cookies
Best friends don’t let other best friends skip Maple Bacon Chocolate Chip Cookies. And it’s a holiday, you might need a cookie {or four in this case…}! Just fair warning, once people get their hands on the cookies they won’t last long – so tuck a stack of them away in a super secret place for yourself… {right, only joking a little — bacon+cookies are serious business!}
