Are you ready for a super yummy and highly impressive dessert? These little beauties are easy to make and look oh-so pretty all plated up! And when someone asks what you made and you respond with “coconut macaroons” you sound extra swanky.
These little cuties also have a fabulous texture blend of slightly crunchy on the outside but soft, light and slightly chewy on the inside! They aren’t too sweet and the chocolate just adds the little bit of extra swankiness we talked about earlier! Pretty much whether you’re making them for yourself while you binge your favorite form of entertainment or to bring to serve at a get together, you’ll impress anyone and everyone.
And let’s be real honest for a second… sometimes it’s really nice to just make yourself something pretty to snack on that isn’t a mug cake!
As a bonus? Because this recipe only uses egg whites – you finally have a wicked yummy use for those extra egg whites you have when making mayo! I know, I know — you’re welcome ;)! I literally make my mayo while these are in the oven and by the time both are done I feel like I’ve been extra productive and can proceed to sit and enjoy my macaroons.
As always – use the good maple syrup, no crap stuff allowed! And for the chocolate chips I used my usual Enjoy Life Chocolate Chips because they’re amazingly yummy and nut, dairy, soy free! Also they’re tiny so they look adorable in these macaroons!
If you don’t like chocolate you can leave these out! However if the batter seems a little too wet you might need to add a small sprinkling of shredded coconut to make up for it!
Also if you manage to have leftovers store these in either a zip lock bag or airtight container or something so they don’t get stale!

Easy & Yummy Paleo Chocolate Chip Coconut Macaroons

Description
Chocolate Chip Coconut Macaroons are elegant, yummy and really easy to make!
Ingredients
- 1 1/2 cups shredded coconut
- 1/3 cup good quality maple syrup
- 1/2 tsp cinnamon
- 1 tablespoon vanilla extract
- round 1/8 tsp of salt
- 1/3 cup mini chocolate chips {I use Enjoy Life Chocolate Chips}
- 3 large egg whites, beaten to stiff peaks
Instructions
- Pre-heat your oven to 325 {F}
- In a mixing bowl add in your shredded coconut, maple syrup, cinnamon, vanilla, salt and chocolate chips and mix it all together well.
- In a seperate bowl beat your egg whites until they’ve reached the “stiff peaks” stage. You can either do this by hand, with a stand mixer or a hand mixer!
- Slowly combine your beaten egg whites with your coconut mixture. I’m talking a scoop of egg whites into the mixture, fold it in and then add more egg whites until it’s all combine. Be super careful not to over mix – you don’t want to mix out the fluffyness you’ve worked so hard to achieve!
- Once it’s just combine use either a small cookie scoop {I used my usual #70 cookie scoop} or a teaspoon to scoop your macroons onto a parchment lined cookie sheet. You want to work somewhat quickly so you don’t give your batter time to deflate at all.
- Bake in your oven for 20-25 minutes, or until the top and edges are golden brown and the macroon is set. Let cool and enjoy!
