Does anyone not love chicken salad? I mean..its yummy, and easy..and cheap.. did I mention cheap?
I was sick last week for a few days so dinners weren’t that amazing {but heyy I didn’t eat a lot so I had extra..haha}. I really wanted something yummy..Like holy cow I want it again tomorrow yummy. And did I ever succeed!
So what was dinner you’re asking.. Chicken Salad Sandwiches {gasp!} Sweet Potato Spears with the homemade mayo dip. Ready for these yummy recipes?
Chicken Salad
{Make extra..it’s that good}
Ingredients:
• 1-2lbs chicken {Cooked, diced I boiled mine because I was lazy, but you could pan fry in coconut oil or bake it in the oven}
• 1/2 cup {or more} Raisins
• 3/4 Green Apple Chopped pretty finely
• 1 Medium Onion
• 1-3 Cloves garlic {If you <3 Garlic..go wild.}
• 2-3 Tbsps Mustard
• 1 Tbsp Lemon Juice
•1/4-1/2 cup Homemade Mayo {Depends on the consistency you like}
•Salt, Pepper
•Herbs {Fresh or dried..add to taste}: Basil, Italian Herbs & Seasoning, Parsley {I forgot to add Dill to this..but Dill + Chicken = Yummy}
How-To:
• While you’re chicken is cooking {pick your favorite method}, Cut up your sweet potatoes into Spears and get those cooking..{ Recipe Here }
• Then while those were going I made my “bread” {Ingredients and How-to Down Below}.
• If you’re mayo isn’t made.. make it now while your chicken is cooking, so it has time to sit in the fridge and cool down and get yummier
• Let your chicken cool down for a bit, chop up your onions to a medium dice, toss ’em in a pan with coconut oil and let it start to cook down. When it’s almost cooked through, add your garlic in.
• Chop up your chicken {or shred depending on your preference}.
• Get a big ‘ol bowl and put your chicken and onion/garlic in there.
• Cut up your apple, add that, and your raisins as well as your mayo, mustard, spices, lemon juice.
• Mix it up, give it a taste add more seasoning, mayo, or mustard as needed.
•Plate everything up and enjoy! It was a quick easy meal…and yummy….so yummy I had the leftovers for breakfast!
Easy Right? I know .. I know.. I’m just as excited as you are! You can add whatever you want into this too. Nuts, different fruit, Hard Boiled eggs, Additional meats {I’m adding sausages next time because it will be epic!}
“Bread”
{This is the same dough and method I use for my pizzas, I just let it get a bit crispier, add my toppings and sauce, and then I pop it in the oven for an extra 5 minutes and boom…pizza!}
Ingredients:
• 2 Cups Almond Meal {I grind my own almonds..it’s cheaper}
• 2 Eggs
• 1.5 Tbsps Olive oil + Extra for the cookie sheet
• Salt, Pepper, Basil {dried}
How To:
•Combine Almond Meal, Eggs, Olive Oil, Salt, Pepper, Basil in a bowl. It’s going to be sticky and kind a weird almost in texture. I use a fork to mix it up.
• Line your cookie sheet w/ Aluminum foil. Then coat that sucker in a good amount of olive oil. I use my hands to spread it around so my hands have olive oil which makes spreading the dough easier.
• Put the dough in the center of the cookie sheet and spread it out so it’s pretty thin {Mine takes up almost my whole cookie sheet}
• I use the heel of my hand and almost pound the dough to get it spread.. great for any tension you might have!
• Bake at 350 degrees for about 8-10 minutes {start watching it around 8 minutes} When the edges are golden brown and its still kind of soft, take it out and let it cool.. thats the perfect texture for bread. {If you’re making pizza, you don’t want it to be too soft}
I cut that up into 4 pieces, and 2 pieces for the sandwich, then cut those in half! Talk about yummy 🙂
And tonight for dinner, I’m going to make pork burgers with eggs.. and use said left over “bread” For my burgers. Oh man..so excited.
So how does this break down budget wise?
Chicken + Almond bread + Sweet Potato Fries + Mayo dip = $6.00 for two people = $3.00/person {and for me it was really $1.50 because I could only eat half at dinner and then I had half for breakfast!}
