That’s right …. you’re not reading it wrong.. ohh no.. the amazing bacon I blogged about earlier? well… it had a baby with hard boiled eggs… and let me tell you… I’m still doing a happy dance …. hours later…..
I’ve noticed recently that all my “sides” were boring or way to high in carbs {sweet potatoes } So the next few recipes will be my version of “sides” that are easy and cheap. I want to kick up the weight loss again so I’m cutting sweet potatoes down to once/month and cutting out almonds for the most part {unless they’re a binder in a recipe}. I’ve also completely cut out alcohol and really curbed my caffiene {coffee a few times a week instead of a few times a day} And no dairy at all. I feel freaking amazing! So heres the start of a few really good side dishes to have in your back pocket !
And who doesn’t like egg salad? It’s like not liking chicken salad… it’s wrong on sooo many levels. But if you don’t like it… then switch out eggs with chicken.. or something along those lines.. But oh man was it ever the yummiest thing I’ve had..today lol. I made a sausage “salad” yesterday.. that was amazing..but I want to make it one more time to make sure I got everything right.. then you’ll be in love with that too.. so much food coming your way soon! {oh yeah and it’s cheap}
The egg salad is a great thing to make when you’ve got a big crowd coming, or bringing something to someone’s house… because its pretty… looks fancy… but was cheap and easy and yummy! Ohhhh it’s my favorite kinda meal! Ok you ready for this?
Ingredients:
• 7 Eggs Hardboiled { why 7… well if I had done 6 there would have been three left in the carton.. and I’m weird and that would have driven me crazy! }
• 1 Medium onion white {or yellow } diced
• 4 slices of bacon
• 3 Cloves of Garlic
• 1/4 cup of homemade mayo { give or take.. make it how you like it }
• 1-2 tbsp mustard { again to your preference }
• 1 heaping tbsp of Italian Seasoning
•1/2 tbsp of Rosemary
• Salt and Pepper
How To:
• Get those eggs rockin’ and rolling.. I hard boil eggs by, filling a pot with cold water, putting the eggs in, so there about an inch of water covering them. Leaving the lid off turning the heat on medium to medium high and when it gets to a boil I put the lid on, turn it off and let it sit for 10 minutes. When your times up put them right away into super cold water. Then let it sit so they’re easier to peel.
• In a pan fry up your bacon {remember to make yourself an extra piece or two to munch on.. and in my case share with kyra the crazy puggle {{Seriously shes a bacon addict!}}}. While thats going chop up your onions. Pull your bacon out and let it drain on a paper towel.
•Turn the heat down a little so you don’t burn your onions, add those in and start to cook them {yes right in all that omg yummy bacon fat!}. While the onions are doin there thing, crumble the bacon in a big bowl and chop up your garlic.
• When your onions are almost done add the garlic {you don’t want to burn} In the midist of all this get your eggs peeled and chopped. I had lag time between adding my garlic in so I just did it then, if not when your onions are done .. peel the eggs and chop them then, or before hand. Whatever floats your boat 🙂
• Get eggs, onions, and garlic in the bowl. Add whatever bacon fat is left in the bowl {if it’s a lot of bacon fat you don’t need to add all of it, but most is ideal}
•Add mayo, mustard, spices, salt and pepper, mix it all up! Check to see if you need more spices or mustard.
• Enjoy! { Warning it’s addictive! }
I made beef burgers to go with it.. but really just a big old bowl of this would be enough. Also if you like raisins .. this is a great thing to add in.
Price wise it breaks down to: $3.00 to make so : $3.00/2 people = $1.50 per person / 2 meals {we’ll have left overs for breakfast tomorrow!} = $0.75 per person per meal!
